Carrots are prepared differently for the winter. Today we will consider the simplest option that can be stored for several months in a refrigerator. It is good to use such a blank as an appetizer, and also use it to create tasty and satisfying sandwiches.
Carrot caviar: a detailed recipe
Components for procurement:
- tomato paste - ¾ cup;
- laurel leaves - 5-7 pcs.;
- fresh large carrots - 1 kg;
- large onions - 500 g;
- flavourless vegetable oil - 1 full glass;
- ground black pepper - ½ dessert spoon;
- table salt, granulated sugar - add to taste;
- large garlic - 2-3 cloves (add to taste).
Vegetable processing
Carrot caviar is harvested very quickly and easily for the winter, if only large vegetables are used for such an appetizer. Thus, the main product needs to be washed well, cut the stalks and peel, and then grind in a meat grinder. Exactly the same should be done with the heads of onions. It is worth noting that it is impossible to combine both vegetables in any case, since they must be processed separately.
Stewing vegetables
In order for carrot caviar to cook well for the winter, you should take a deep stewpan or an enameled basin, and then put in it the whole chopped orange vegetable, ½ part of vegetable oil and a little water. In this composition, the product must be stewed until soft. After that, it is necessary to place onions, the remaining oil,
tomato paste diluted with cooled boiling water (1/4 cup), and bay leaves in another pan. These components should be cooked for 25 minutes, and then put them in stewed carrots, salt, pepper, add sugar and grated garlic cloves. Next, the ingredients must be mixed well and cooked for about 6-9 minutes.
The final step in the preparation of snacks
As you can see, carrot caviar is prepared very easily and quickly for the winter. If you do not intend to keep such a tasty and aromatic snack for too long, then it is not necessary to put it in sterilized jars. To do this, you should take ordinary glassware (750 g or 0.5), wash it well and completely dry it. After that, all previously prepared caviar should be distributed in jars, which should first be cooled in cold air.
Due to the fact that carrot caviar will only be stored for a season in the refrigerator, it is undesirable to seal it tightly. It is enough to cover the workpiece with a plastic or glass lid and completely cool in the room for a day.
How to serve to the table
Caviar from carrots and other ingredients will be suitable for use a few days after its preparation. This appetizer is recommended to be served chilled for dinner. It can be eaten in the form of a winter salad, added to various goulash, gravy, or simply applied to a piece of fresh bread and consumed in the form of a tasty and fragrant sandwich. It is advisable to store such a blank in a cool place for no more than 3 months.
