Dumplings - one of the most popular dishes of Slavic cuisine. Their main advantage is that the food is prepared quite quickly, it is obtained in large quantities, and a variety of foods are suitable as filling: vegetable, sour-milk, meat, fruit and berry.
Dessert Dumplings
As it is already clear from the title of the section, it will focus on sweet dishes. In them, the filling for dumplings may consist of cherries or apples. Although plums, apricots, hard peaches, blueberries are quite suitable for this role. However, it was cherries that became the berry that we put with special pleasure in food. varieties of cherries. If acidic are taken, sugar is added to them. Before processing, until the dough is kneaded and cut, put the peeled cherries in a colander so that juice drains from them. About dumplings with potatoes and not only
Dessert - dessert, but let's talk about food more substantial. Namely, how to prepare the filling for dumplings with potatoes. Its varieties, by the way, are also several. And each has its own piquant nuances that give the dish a special, unique taste. It's all about spices and additional ingredients. After all, there is a potato filling for dumplings in their pure form, and sometimes mixed with feta cheese or hard cheese - whoever likes it. Let us dwell on the two most advantageous options.
Mashed potato filling
To cook it, peel the potatoes, cut into medium sized pieces and boil in salted water until tender. While waiting for the completion of the process, cut a few onions and fry them until golden brown in vegetable oil. Do not spare quantities, it will be a dressing for minced meat. Drain the water from the finished potato and thoroughly interpret it. Use a mixer or wooden pestle. It is important that you get a homogeneous mass, without lumps. Do not add liquid, the mashed potatoes should be thick, dense. Then season it with roasting, add salt and pepper well. The taste should be rich, pungent. Such dumplings are served on the table hot. Dressed also with fried onion, with ketchup. Or sour cream, mayonnaise - who likes what more. Sprinkled with chopped herbs. Well to them go horseradish and mustard.
Raw Potato Filling
It is much easier with her. Raw potatoes are peeled, washed, cut into small cubes. The filling is laid out on mugs of cool kneading dough. Dumplings are boiled in well salty water - so as not to turn out fresh. Of course, they will have to be kept in the pan a little longer than with mashed potatoes. But not much. This dish is very tasty with sour cream or sour cream and mushroom sauce. When serving, each serving should be sprinkled with ground pepper. Eat should be hot.
Filling of potatoes with feta cheese
But this dish came to us from Moldavian and Romanian cuisine. It is remarkably tasty, nutritious and healthy. Minced meat is prepared on the basis of mashed potatoes, where a rather large amount of hard salted feta cheese grated on a large grater is added. Naturally, more salt is not required. And since the feta cheese itself is rather oily, then you can do without onion frying in the filling. Although this is a matter of taste, porridge cannot be spoiled with butter. Yes, it’s great if you mix finely chopped dill into the potatoes right away. Well, a dish with sour cream or seasoned with vegetable oil is served. It goes well with vegetable salads - fresh and canned. Separately, for all the dumplings with potatoes, you can offer men - garlic sauce. To make it, a garlic head is passed through the press, seasoned with sunflower oil, added, and to soften the taste, a little boiled water is added to it. This is also, so to speak, Moldavian flavor.
Fresh Cabbage Dumplings
The classic stuffing for dumplings with cabbage is made from fresh vegetables or pickled. In the first case, you should do this: in a cast iron until golden brown, fry 2 onions, chopped not too finely. Then put them on a plate, add more vegetable oil to the pan and put chopped cabbage. Do not cover, fry it for 10 minutes over medium heat. Stir so as not to burn. Then add grated carrots, onions, salt, pepper, bay leaf, coriander, pour a little water and simmer under the lid until almost done. At the end, put a couple of spoons of tomato and, if you want, a little sugar. It would be nice to chop dill or seeds. As spices, you can use several inflorescences of cloves. Cool the prepared cabbage, let the excess oil drain. When serving, they can be seasoned by frying onions with butter or lard, with cracklings. It will be tasty with sour cream.
Sauerkraut Dumplings
The technology for preparing this filling is determined by the degree of acid in the cabbage. At moderate saturation, do not rinse. You can immediately chop finely, add grated carrots and fry in a deep pan, and then stew until cooked. Separately, fry onions, add spices, bay leaf, 1-2 bell peppers. Then connect the components. To make the taste sharper, chop a couple of cloves of garlic and a little parsley.
Cottage cheese dumplings
Very soft, soft, pleasant is the curd filling. For dumplings, it is made sweet and brackish. The main secret of quality minced meat is the homogeneity of the curd mass. To do this, the product should either be grated well through a sieve, or several times passed through a meat grinder or beat with a mixer. Cottage cheese can be mixed in two varieties - fatty and not so. Beat 1-2 eggs in it. If you plan to make dumplings for dessert, add sugar to your filling, to taste vanilla. You can pour raisins or dried apricots, only first they should be soaked in hot water, and then, when swollen, finely chopped. Stir the filling thoroughly and put in dumplings! Eat them should be hot, with sour cream. For spicy minced meat, it is recommended to mix the cottage cheese with feta cheese, add chopped greens. Or it’s good to add salt and pepper. Sculpt, like any other. Serve with sour cream or onion.
Dumplings with minced meat
And finally, a delicious filling for dumplings with mushrooms. It is made, as a rule, from fresh gifts of the forest, although dried ones are also excellent. Wash the mushrooms, cook until cooked.
