Potato roll

The number of dishes based on minced meat can amaze with its variety. These are various zrazy, meatballs, casseroles, meatballs, pies. However, often they do not get on the festive table for a variety of reasons. To eliminate this omission, I decided to share one of my recipes and cook with you a potato roll worthy of a festive table. At first, a couple of times over the weekend I showed this dish to my friends. Seeing with what appetite they consumed it, I realized that this culinary masterpiece is quite worthy to take its place in the festive menu. This has been going on since then. Each time I improve in its preparation. Try to cook it, you do not need to buy overseas products for this, everything is quite simple, but at the same time it is a hearty and tasty dish.

How to cook potato roll? To prepare it, we need: 8-9 pcs. potatoes, half a glass of fresh milk, 700 grams of chicken liver, eggs, onions, vegetable oil, salt, pepper and crushed crackers. So, first we peel and boil potatoes in water. When it is cooked, it should be mashed hot, as for mashed potatoes. Pour half a glass of hot milk, knead. Next, add two raw eggs, a little salt, a couple of tablespoons of vegetable oil, then mix everything thoroughly. This mashed potato will be a roll wrapper. We give him a little stand.

And we ourselves are taken for minced meat. In this case, we will prepare it from fresh chicken liver. We take 700 grams of chicken liver, rinse it well, put it in a colander and leave the glass to water. At this time, we must fry in half rings until golden brown 5 medium onions in vegetable oil. While the onion is fried, we must cut each chicken liver into 2 equal parts. Then put the liver into an almost prepared onion fry and stir constantly until it is cooked. Note! The liver should not bleed, there should not be unroasted pinkish areas, only in this case it is considered absolutely ready. The color of the finished liver is light brown. About five minutes before the end of the frying, we salt the minced meat, pepper it with ground black pepper, add a pinch of ground zira. As soon as our mincemeat from the liver, fried onions and butter cools down, we immediately grind this mixture in a blender.

We preheat the oven in advance to 200 degrees. Then we prepare a baking sheet, laying on it a sheet of foil, which must be coated with a brush with vegetable oil. Further on the foil sheet, we begin to lay out the potato roll. From a third of mashed potatoes we make a rectangle and level it. Spread the minced meat on top of the potatoes and level it again. Then, in conclusion, all the remaining potatoes must be carefully laid on the whole structure. To do this, I grease my palms with oil, and then give the roll the shape of an oval loaf. At the end, mix the yolk of a raw egg in a bowl, and this yolk should manually cover the entire surface of our roll (this procedure contributes to the appearance of a golden brown crust), and then sprinkle with crushed crackers.

Before we put potato roll in the oven, you should definitely pierce it in several places so that the top surface does not crack. Wooden skewers are good for this, as they are as thin as toothpicks. Bake the roll for half an hour. When we take the potato roll out of the oven, we must leave it alone for a while, that it has cooled down, β€œcaught its breath”. After that, using two spatulas, transfer the roll to a beautiful large plate, and then carefully cut it into beautiful slices. Serve with butter. Do not confine yourself to preparing this dish only for the holidays - believe me, there is nothing tastier for afternoon tea or dinner in nature.

By the way, this recipe can be varied using other fillings. Potato roll with meat, mushrooms, an egg with greens will also turn out delicious.
