Stuffed meat and chicken rolls are very popular among our hostesses. After all, they are simple to prepare, very satisfying and have an attractive and mouth-watering appearance. In addition, experimenting with fillings according to the same recipe, you can make completely different taste rolls.
Basically, such rolls are prepared from chicken or pork (flank, sirloin). As for the fillings, they can be very different: eggs, mushrooms, ham, a variety of vegetables, nuts, dried apricots, prunes, cheese, pancakes, egg omelet. Here you can safely show imagination and focus on the taste preferences of the family.
Since there are a lot of recipes and it is not possible to describe all of them, I offer you only a few of the most beloved and proven ones.
Chicken roll with dried apricots
To cook chicken rolls stuffed with dried apricots, we need: chicken breast (4 pcs.), Dried apricots (250-300 gr.), Champignon mushrooms (8-10 pcs.), 100 gr. bacon and hard cheese, a few tablespoons of mustard, black and allspice, salt.
Cooking. We wash the chicken breasts , dry with a towel and beat off slightly, being careful not to damage the fillet (you can cover it with cling film or put in a plastic bag). Salt each bitten off, sprinkle with black and allspice, grease with mustard. Put the fillet so pickled in the refrigerator for 20-25 minutes.
Wash the mushrooms, dry them and cut into thin slices. Pour dried apricots in a bowl and pour boiling water, let stand for several minutes, drain the water and dry. Then cut into small longitudinal strips. We grate hard cheese on a coarse grater. Cut the bacon into thin strips.
We get the chicken breast, lay it out, add a little if desired, spread mushroom slices on top of the entire area, sprinkle with grated cheese a little, put dried apricots on top. Everything is carefully folded with a roll and wrapped in strips of bacon. We fix the resulting composition with toothpicks or rewind the threads. We do the same manipulations with the remaining chicken breasts. We place the chicken rolls with the filling on the baking sheet and place in the oven preheated to 180-190 degrees. At the same temperature, the baking process takes place. After about 20-25 minutes, the dish will be ready.
Serve chicken rolls stuffed with dried apricots can be hot, or as an appetizer in the cold.
Meatloaf with mushrooms and cheese
A roll prepared according to this recipe will be the highlight of any table. Therefore, having prepared such a roll for a festive feast, the question of how to cook meatloaf, you will often hear from your satisfied guests.
To prepare pork roll with cheese and mushroom filling, we need: pork loin (1-1.5 kg), hard cheese Russian (200 gr.), Porcini mushrooms or champignons (500 gr.), Bell pepper (2 pcs.), a small head of garlic, green onions (100 gr.), a few tablespoons of mustard, peppercorns.
Cooking. Take a pork loin, cut it into a layer. To do this, we make a longitudinal incision in the middle so that about a centimeter remains to the edge, now we cut across the formed pieces to the right and left, leaving the edge of 1 centimeter undercut. If you did everything right, the loin should be laid out like a book, forming a large sheet 1.5 cm thick. We make shallow cuts in the opened sheet of meat, they are necessary so that the seasonings are better absorbed. Salt, grease with mustard, pepper. While the meat absorbs the spices, we prepare the filling.
We clear the bell peppers from seeds and cut into small strips, wash and clean the mushrooms, slightly remove the moisture with a napkin, cut them the same way as pepper - with straws. Grind green onions, crush garlic. We grate hard cheese on a coarse grater. Mix everything and slightly add salt. When all the ingredients are sliced, spread them in an even layer on the meat. Gently roll the roll. We fix it with a thread.
If desired, you can make a sauce, which will be poured roll during baking. To do this, mix a few tablespoons of olive oil, peas of black pepper, a spoonful of mayonnaise and half a glass of white wine.
Before putting the roll in the oven, pour it with sauce. It is necessary to place the roll in a preheated oven to 190-200 degrees, at the same temperature, baking also takes place. From time to time it is necessary to check the readiness of the roll, while not forgetting to pour sauce over it. The approximate time after which the meatloaf should be cooked is 1.5 hours.
