Orange sauce for different dishes

The French believed that sauce is the main component of any dish. And they are right. Just try to boil any meat, and then serve it on the table, pouring, for example, one part with sweet cream sauce and the other with curry sauce. You will get two completely different dishes with dissimilar tastes.

In order to diversify the taste of familiar dishes or snacks, you can prepare an orange sauce. It can be sweet or sour, spicy or tender: the choice of taste depends on the dish to which this original gravy will be served.

To prepare an orange sauce for one portion of donuts (pancakes, pancakes), you need to take

  • 2 large oranges;
  • 20 g butter;
  • sugar to taste.

From the oranges, first remove the zest, rub on a very fine grater. Then they are cleaned of the films. Squeeze juice from one, mix with zest. Slices of another are cut into small pieces.

Melt butter and sugar in a pan. When the caramel is browned, it begins to thicken, orange juice with zest is poured into it, stewed for several minutes. Sweet and sour pork has long been loved by our compatriots. But few people know that orange sauce is suitable for such a dish. The recipe is simple: first, sweet soy sauce with warm water is mixed in equal amounts. Then they add melted honey, orange juice , red pepper, curry, orange zest. The prepared mixture is poured into a pan with melted butter, stirred until the mass becomes thick. If the sauce is completely liquid, you can add a little flour or starch to it. This orange sauce is good because the culinary specialist selects all the ingredients, focusing on his own taste: there is no strict ratio of products.

For those who do not like hot sauce, you can offer a different recipe. Orange sauce will be very tender. Required:

  • orange;
  • a large spoon of cream;
  • honey;
  • butter;
  • flour;
  • cinnamon.

As in previous recipes, orange juice is mixed with zest, stewed in a pan with honey and butter. At the end, add cinnamon - it will remove sugaryness, emphasize the aroma of the product. Flour is needed in order to thicken the gravy.

Orange fish sauce is a very tasty addition. It can be prepared according to hundreds of recipes especially for fish. And you can make a spicy orange sauce, which will be universal: it perfectly complements the taste of poultry, fish, any meat.

Have to take:

  • juice of two oranges + their zest;
  • 2 tablespoons of horseradish;
  • 2 tablespoons of cognac (or white wine);
  • a small spoonful of mustard (preferably sweet, French);
  • juice of one lemon

All ingredients are mixed except mustard, stewed for several minutes over low heat. When the gravy thickens, it is cooled, salted, pepper, mixed with French mustard. The sauce is ready.

There is another rather rare version of orange fish sauce. He is prepared like that. First, a leek passer in the pan. When it is ready, it needs to be removed. In the remaining oil, pass one peeled tomato until cooked. They take out, in the same pan, slightly flour the flour. Then they add fish broth to it, boil for 5 minutes, no more. At the very end, add onion, tomato, orange juice with small zest, spices to taste. Original tomato-orange sauce is usually served with fish of especially rare varieties.

Blue cheese and orange sauce are preferred by pasta lovers. To prepare it take:

  • orange juice and zest;
  • about 100g sour cream;
  • as much blue cheese;
  • chopped onion;
  • a spoonful of sweet and a spoonful of ordinary mustard.

It is clear that the ratio of components completely depends on the preferences of the cook.
