  • chicken fillet - 300 g;
  • champignons - 160 g;
  • small onions - 2 pcs;
  • hard cheese - 100 g;
  • fresh greens - a large bunch;
  • young eggplants - 3 pcs;
  • low fat mayonnaise - 120 g;
  • salt, aromatic seasonings, red pepper - according to personal taste and discretion;
  • ripe red tomatoes - 3 pcs;
  • sunflower oil - 65 ml (for frying).

Filling process

Eggplant "boats" are baked in the oven very quickly. Therefore, it is better for them to prepare a filling that does not require a long heat treatment. For this, we decided to use chicken fillet. It should be taken in an amount of 300 g, washed thoroughly, separated from bones and skin, and then finely chopped together with processed mushrooms.

In order to make the β€œboat” of eggplant with mushrooms more fragrant, it is recommended to fry the filling in advance on a gas stove. To do this, heat the stewpan, pour oil (sunflower oil) into it and lay out pieces of chicken fillet with mushrooms and chopped onions.
