Take 0.5 liters of kefir (preferably not from the refrigerator, i.e. room temperature). Pour in it an incomplete 1 tsp. plain baking soda and stir with a fork. Drive 2 eggs into the mixture immediately. Then add 2 tbsp. l loose sugar and a couple of whispers of salt. Pour flour into the foamy liquid and knead. It will take about 400 g. The consistency of the dough should be quite thick. When trying to pour from a spoon, it should not drain, but be pulled by a thick mixture.

If you do not comply with this condition, you will not get magnificent pancakes. The recipe allows the addition of flour "by eye". After the dough is ready, let it brew a little. Baking in a hot pan with a thick bottom in vegetable oil, periodically pouring it in small portions. Dry baking is not applicable to this recipe, since the pancakes will turn out raw inside. The use of a cover is also recommended. Frying products on one side for 2-3 minutes, turn them over to the other. Put the finished hot pancakes on paper towels to remove excess oil. Serve them by sprinkling with powdered sugar, pouring jam, honey or sour cream.

This method of preparation differs from the previous one in that soda is poured into a fully finished dough as the last component. The result is also very magnificent pancakes. The recipe described below is designed for a lower yield of finished products, since the proportions of the products are divided approximately in half. Mix in a bowl 1 cup low-fat warm kefir, 1 fresh chicken egg, 1 tbsp. l sugar, a pinch of salt, 2 tbsp. l any oil and 1 cup flour. After the mass is brought to full uniformity, pour 1/2 tsp. baking soda or as much baking powder. The mixture with a slight whipping should begin to bubble a little. Leave the dough for a few minutes for easy fermentation, and then bake, following the recommendations of the previous method.

You can similarly cook pancakes on curdled milk “Lush”. The recipe will differ only by replacing one fermented milk product with another. By the way, many housewives in extreme cases use sour cream, diluted with boiled water, or milk. In this case, it will be necessary to increase the amount of flour for the desired density.
