To cook this delicious and festive dish, first you need to bake pancakes. For the test we need:
- a liter of milk;
- a dozen chicken eggs;
- a quarter pack of butter or 50 grams;
- a pinch of salt;
- flour - so much as to make the dough, in consistency similar to liquid sour cream.
Drive eggs and melted butter into the milk, add salt. Beat well, and gradually, avoiding the formation of lumps, pour flour. The dough should be perfectly mixed. Leave the dough for 20-30 minutes, so that the flour swells. We put the pan on the fire and heat it. Pour the dough into a pan with a ladle or a large spoon and fry until golden brown on both sides. Pancakes are best fried in a Teflon-coated pan to avoid the need for additional oil or fat. Pancakes should be thin, with small holes.
While the pancakes are cooling, prepare the filling. We will need:
- salmon fillet (can be smoked), about 200 grams;
- several branches of fresh green dill;
- any cream cheese that you like best, 200 grams.
Cut the fish fillet into thin slices, wash my greens, dry and finely chop. Mix chopped dill with soft cream cheese. We take a pancake that has completely cooled and spread the cheese with dill and several slices of salmon evenly on it. Carefully give the pancake the shape of a roll. We do the same with the rest of the pancakes and the filling. Ready-made pancakes with salmon, the recipe of which is very easy to prepare, put in the refrigerator until the guests arrive. Before serving, pancake rolls are cut with a sharp knife in portioned slices and laid on lettuce leaves. You can stick a skewer or a toothpick into each piece.
