Homemade Puff Pastry

Sift 3.5 cups flour into a bowl. Freeze 250 g of butter. Thoroughly excise it with flour (use a special chop, grater or food processor). When the dough turns into small crumbs, add a glass of salted ice water and knead it with your hands, combining in a lump. This is convenient to do on a table crushed by flour. The dough should turn out plastic, then each puff with jam will be high and magnificent. Wrap it and refrigerate.

In the meantime, let's do some butter. It will take the same amount - 250 g. Rub it on a coarse grater, add half a glass of flour. We hide in the refrigerator.

After half an hour, you need to get the dough. Roll it into a layer, trying to give it a square shape. The thickness of the dough should be about 1 mm.

Take out the oil ball, mash it with your hands directly through the bag, also forming a square. Roll with a rolling pin. This square should be of such a size that its vertices reach the midpoints of the sides of the square of the dough. Take it out of the bag and put it in a diamond. Wrap the edges of the dough so that their vertices meet in the middle of the rhombus. Repeat folding the corners 2-3 more times, then turn the dough over and roll it with a rolling pin. Repeat the procedure again. If the dough begins to thaw and stick, let it β€œrest” in the refrigerator for about 20 minutes. Now fold the square in half, side to side, and roll another 3 times. Refrigerate again before forming.

Puffs with jam are especially good, the recipe of which is based on everything homemade. Jam can be made from apples, cherries, plums, raspberries, apricots or a mixture of fruits. It is convenient to do this in a bread machine, then the process will take very little time. If you plan to cook jam on the stove, do it the day before so that it cools sufficiently. Take a glass of chopped fruit or berries, sprinkle with sugar (2/3 cup). Leave for an hour, then set to simmer on low heat. Bring to a boil and turn off. After cooling, repeat. Jam will boil for 3-4 times. At the end, beat with a blender, boil again and let cool well.

Puff pastry layers are most often made triangular in shape. For this, rolled dough must be cut into squares with a side of about 10 cm, grease the middle with jam and wrap it around the corner. The edges and surface are smeared with strong tea. This is an important point, because for the lightest puff pastry, the yolk can be heavy, and the tea gives a shade without making it heavier, and it glues the edges perfectly.

You can fold the square in half and not on the diagonal, but on the midline, then the puffs will be rectangular. Beautiful puffs can be made by cutting each square from corner to center. Spread jam in the middle, and wrap the corners to the center through one, as if forming a baby turntable.

In the oven

Puff with jam - pastries, the preparation of which in the oven requires very little time. Fold the items on a parchment-decorated deco, and place in an oven preheated to 180 Β°.
