Asparagus has appeared on the Russian shelves for a long time, the product is extremely useful, but for many it is still considered something exotic. Place a baking sheet in the upper part of the oven, heat it to 230 degrees. Trim the hard tips of the stems of the asparagus sprouts. The pieces of stems that you cut off, you no longer need, they can be thrown away. We spread the prepared asparagus on a silicone mat or on a sheet of paper intended for baking.

In a bowl, mix olive oil, chopped garlic and lemon zest, mix thoroughly. Then we pour asparagus with this mixture so that it is evenly distributed. Salt, pepper. Spread lemon slices around asparagus sprouts.

We put asparagus in the oven and cook until it gets a little golden hue and becomes quite soft - in time it takes about 7-10 minutes. Ready asparagus must be put on a dish and enjoy the excellent taste!

First, the vegetable must be properly peeled. Green asparagus begins to peel from the middle of the stem downward, cutting off the peel with a special knife for peeling potatoes. White asparagus begins to peel from the very top down. The tops should be cut 1-2 cm.

After cleaning the asparagus, put it in a double boiler and cook for 5 minutes. At the same time, water is needed a little salted. Using a wooden skewer, check the preparedness of the vegetable and begin to prepare the salad. One of the popular recipes if you want to cook asparagus dishes is a salad from it with the addition of lemon juice.

You need: 400 g of green asparagus, juice and zest from one lemon, 2 tablespoons of vinegar, better than wine, egg, crunchy crackers, sugar, pepper.

First you need to make the sauce: everything except the eggs and asparagus must be mixed well in a blender. If desired, black pepper can also be added. The asparagus cooked in a double boiler should be cut into slices, season with sauce, sprinkle with crackers and crumbled eggs.

However, this is not all simple and affordable asparagus dishes. For example, you can make asparagus soup, the recipe for which is given below.

For this you will need: 500 g of asparagus, 2 l of water, 50 g of oil, 100 ml of fat cream, salt, 2 tablespoons of flour, pepper.

The asparagus should be washed and peeled well, remove a thin skin, rinse again and cut into 1.5 cm slices. Pour 2 liters of water into the pan, heat to a boil and place the asparagus in it. Salt and cook for 15 minutes.

While the asparagus is cooked, you need to make a flour stewing - in a small skillet, melt the butter, fry the flour in it until golden brown. Remove from the stove and let cool slightly, but not completely. From the pan you need to take 100 ml of broth and, continuously stirring with a whisk, so that no lumps appear, pour the broth into flour.

When the asparagus is ready, you should remove the pan from the stove, catch a few whole slices, grind the rest of the soup with a blender or rub through a sieve. Now you need to put the pan back on fire, bring to a boil and, stirring with a whisk, introduce the flour sauté, then cream and whole slices of asparagus. Give the dish another boil. We put freshly ground pepper, spices to taste. The soup is ready, you can pour it on plates.
