As you know, caviar can be made from many vegetables. Today we propose to consider the option of cooking this pumpkin dish. Such caviar will please you not only with its original, rich taste, but also with a bright color.
Pumpkin caviar : a recipe for cooking
For this dish, we need the following products: one kilogram of peeled pumpkin, 100 grams of sweet pepper, onion, two cloves of garlic, a pound of tomatoes, three tablespoons of lemon juice, black pepper, one teaspoon of salt and vegetable oil.
We cover the baking sheet with foil, grease it with oil and spread the pumpkin previously cut into small pieces in an even layer. If the tomatoes are small, cut them into halves, if large, then into several parts, and put them on the foil with the cut up. We also place on the pan a whole washed pepper, peeled and halved onion head and peeled garlic cloves. Lightly grease all vegetables with vegetable oil and send to the oven, preheated to 100-130 degrees.
After 20 minutes, remove the already prepared pepper from the pan. The remaining vegetables are sent to the oven for another 15 minutes. So, our pumpkin caviar is already half ready.
Wait until the baked vegetables have cooled. Then gently peel the pepper and tomato. Then we place the vegetable pulp in a convenient dish and turn into mashed potatoes. You can do this not only manually, but also using a blender or a meat grinder.
The resulting mass is transferred to the pan and, constantly stirring, bring to a boil. Then add pepper and salt. You can also put additionally dried herbs, for example, suneli hops or coriander. Cook our caviar over low heat for another fifteen minutes, stirring constantly. Then add vinegar or lemon juice, boil for another five minutes and remove from heat.
Delicious pumpkin caviar is ready! It remains only to cool it in a cool place for 12 hours (at least), and you can enjoy a great taste!

Pumpkin caviar in a slow cooker : recipe
As ingredients, we take a kilogram of pumpkin, 200 grams of carrots, 200 grams of sweet pepper, 200 grams of tomatoes, a couple of onion heads, vegetable oil - 3 tablespoons, three cloves of garlic, salt, black pepper and a couple of parsley branches for decoration.
Peel the pumpkin, wash it and cut it into small pieces, about 2 x 2 centimeters in size. Peel the carrots, wash them and cut them into circles. From the washed sweet pepper, remove the core and cut it into rings. I peeled the onion and garlic and cut into small slices. The washed tomatoes are cut crosswise and dipped in boiling water for half a minute, after which we extract, remove the skin and cut each tomato into four slices.
Pour oil into the multicooker bowl, put vegetables, salt, pepper, and mix everything thoroughly. Then close the lid and the steam release valve. We set the Roast mode and cook for 20 minutes, after which we open the lid and let off steam.
Cool the vegetables a little, and then chop the blender. We transfer the finished caviar to a deep plate and decorate with parsley.
