Classic version
A dish made using the technology described below is not only tasty, but also quite presentable. Therefore, it is not a shame to serve it not only for a family dinner, but also for the arrival of guests. And you can use it both in hot and in a cooled form. To make a zucchini snack cake with onions and carrots you will need:
- 2 eggs.
- 600 g of young zucchini.
- Large carrot.
- Large onion.
- 5 tbsp. l sour cream and flour.
- Salt, herbs, spices and vegetable oil.
Before you make a cake of zucchini with onions and carrots, you need to do vegetables. They are washed, dried and peeled. Zucchini prepared in this way are grated, combined with eggs, flour, salt and spices, and then mixed well. Three rosy pancakes are baked from the resulting mass and removed to the side.
While they cool, you can do the filling. To obtain it, grated carrots and chopped onions are fried in a pan, slightly cooled, salted and mixed with sour cream. Zucchini pancakes are greased with the resulting vegetable mass and placed on top of each other. From above all this is decorated with fresh herbs, and then served to the table.

This zucchini cake with onions and carrots will surely be appreciated by lovers of low-calorie vegetable dishes. It is prepared very quickly and does not require significant financial costs. To make such an appetizer, you will need:
- 2 small zucchini.
- 5 tbsp. l flour.
- 2 eggs.
- 1 large carrot and onion.
- Β½ tsp baking powder.
- 200 ml of sour cream.
- 150 g of cottage cheese.
- 2 cloves of young garlic.
- 4 tomatoes.
- Fresh cucumber.
- Watercress salad, arugula, dill and green onions.
- Salt, spices and vegetable oil.
Washed and peeled zucchini are grated, salted and left for several minutes. Then the juice is squeezed from them, and the thick is combined with eggs, flour and baking powder and mixed well. 4 identical pancakes are baked from the resulting test.

Washed and grated squash are combined with eggs, flour, salt and spices. Five pancakes are baked from the resulting mass. Each of them is greased with mayonnaise, and then covered with a filling consisting of fried vegetables, minced meat and grated cheese, and stacked on top of each other. Ready cake from squash pancakes is equally good in hot and chilled form.
Option with champignons
This snack cake has a light mushroom aroma and has a very presentable appearance. Therefore, it can become a worthy decoration of any feast. To prepare it, you will need:
- 2 zucchini.
- 3 ripe tomatoes.
- Large onion.
- 200 g of hard cheese.
- 4 tbsp. l oatmeal.
- 2 carrots.
- 250 ml of sour cream or natural yogurt.
- 3 cloves of garlic.
- 2 chicken eggs.
- Vegetable oil.
- Salt, herbs and spices to taste.
Carrots are peeled, washed thoroughly, and then rubbed on a coarse grater. The same goes for zucchini. Processed vegetables are combined in one bowl, salted and thrown into a colander. When excess fluid drains from them, eggs and oatmeal are added to them. Several pancakes are baked from the resulting test. On each of them spread mushrooms, fried with onions and garlic, grated cheese and chopped tomatoes. Then the cakes are placed on top of each other and decorated with greens.
