Cake is modern: what is it? Today, dessert can include several different flavors, types of dough and colors that are harmoniously combined. Basically, modern cakes, the recipes of which are quite simple, consist of biscuit cakes, crispy, jelly or cream fillings, mousse and decor of the upper layer. Depending on the upcoming event, the taste and appearance of the cake can be adjusted.
Chocolate sponge cake
A modern cake must be prepared, strictly following the instructions. The recipe for chocolate biscuit cakes contains the following ingredients:
- sugar - 60 g;
- eggs - 4 pcs;
- honey (trimolin) - 15 g;
- flour - 35 g;
- cocoa powder - 15 g;
- soda / baking powder - 2 g.
Combine 2 yolks with half the total sugar. Beat until tight foam and add 2 eggs. In another container, grind 2 proteins with the second half of sugar. Everything is whipped and honey or trimolin is added. As a result, combine both the resulting masses into one and mix thoroughly.
Add flour, baking powder, cocoa powder gradually. The dough should turn out liquid. Pour it into a mold and put in the oven to bake at a temperature of 200 degrees for five minutes.
Apple jelly
Apple jelly is added to the modern cake to give the dessert a taste of the game. To do this, you need to prepare:
- gelatin - 4g;
- water - 24 g;
- apple juice - 180 ml;
- sugar - 250 g;
- whiskey - 20ml.
Gelatin must be soaked in water. Bring apple juice to a boil and add whiskey to it. If the recipe implies that it will be modern cakes for boys or girls for a children's holiday, then whiskey is replaced with apple juice. Now dry caramel is prepared. Pour sugar into the stewpan, distribute it evenly throughout the bottom of the pan and put on the stove. It is very important not to mix the contents of the stewpan, otherwise the caramel will harden immediately. As soon as the mass takes the caramel color of the desired intensity, it must be set aside and immediately add boiling apple juice. To stir thoroughly.
The resulting liquid jelly is poured into a mold with a diameter slightly less than the size of biscuit cakes and sent to freeze in the cold.
Crispy layer
Modern cakes, recipes for which contain a crispy layer are more popular with sweet tooth.
Dry praline is being prepared. To do this, peeled nuts (you can take your favorite variety, but the classic preparation of modern cakes requires the use of almonds) should be chopped into pieces of medium size. They are laid out in a frying pan, previously heated, and sprinkled with sugar. The ratio is recommended to take one to two (one part sugar to two parts nuts). Everything is brought to a complete melting of sugar. The finished mass is laid out on a silicone board or in any container, cools and crushed.
50 grams of wafer crumb is added to the resulting mixture, everything is mixed and crushed using a blender. At the end add sugar (2 tablespoons) for the crunch.
Melt the dark chocolate in a water bath, grease the finished cake and sprinkle the finished praline on top with a layer of 1 to 21 mm.
Vanilla Mousse
This component will make the cake modern and original, and to some extent aristocratic. For mousse should prepare:
- yolks - 4 pcs;
- sugar - 30 g;
- milk - 150 ml;
- fat cream (35%) - 650 ml;
- gelatin - 4g;
- chocolate - 0.5 kg.
Combine the yolks with sugar and beat until a tight white foam. Cream in a volume of 150 ml and heat the milk on the stove, add vanilla (if desired) and pour in the yolk mass. Heat over low heat to about 85 degrees. In the process, continuously stir with a whisk.
Introduce gelatin into the resulting cream. Finely chop the chocolate, fold it into a prepared deep container and pour hot cream on top. Mix everything until all the ingredients are completely dissolved. Butter cream in a volume of 450 ml thoroughly beat and gently introduce into a chocolate cream. Mousse is ready.
How to make a cake
A modern cake most often has a round shape, but if desired, it can be performed in another form. Half the mousse is laid out in the prepared form and evenly distributed. Put the mold in the refrigerator for solidification for 10 minutes. After the lapse of time, put jelly very neatly set on top of the set mousse and distribute it in the center. Then pour the rest of the mousse into the mold. The biscuit is laid out on top with a crispy side down, and the workpiece is sent to the refrigerator for the whole night. It is desirable that the cake stood in the cold for at least 14 hours. Then it will remain to decorate the dessert in the necessary subjects with mastic.
Mastic
If you plan to cook modern cakes for boys, then you need to decorate them accordingly. You can make figures of superheroes or cars from mastic and decorate the whole dessert with them.
You can make another decoration, but modern cakes without mastic are not so popular.
To prepare you will need:
- Marshmallows - 200 g (1 pack);
- icing sugar - 400 g;
- lemon juice - 15 g;
- butter - 10 g;
- food colorings.
Marshmallows are laid out in a container for heating. Lemon juice is added to it in the volume specified in the recipe and butter. The mixture is set in a microwave or oven for 1-2 minutes. then dyes are added to the mass. If you plan to make a cake in several colors, then the mastic is divided into the desired number of parts.
The mastic is kneaded, icing sugar is added gradually. Everything is kneaded until the stickiness is lost.
The necessary figures are cut out or fashioned from the prepared mastic, or it is rolled out into a sheet, which covers the entire cake.
