The fish is placed in a pan and boiled by adding pepper, salt and bay leaves to the water. As soon as the catfish is cooked, they remove it from the broth.

Onions finely chopped, so do celery and parsley. All this is fried in oil and added to the broth. Separately, sorrel and cucumbers are crushed, which are also lowered into a boiling broth. Soup should be cooked for half an hour. If there is a lack of "acidity" to the broth, you can add brine from cucumbers to it. After 10 minutes, the dish is ready.

Cutlets

Catfish cutlets are very tasty. They need fish fillet (100 g), a sprig of dill, a small spoonful of cream, chopped ginger, lemon, a spoonful of semolina, a pinch of tarragon, shallot (onion), 2 tablespoons of flour. Stuffing is cooked in a blender. To do this, beat the fish, dill, cream and semolina. Then hands make small patties and fry them in vegetable oil.
