Cooking a pie, a delicious pastry recipe

The pie has long been known in Russia and is very popular. It is a pie, usually made of puff pastry, with fish, meat or vegetable filling. The fish is washed, cleaned, lapped inside with chopped greens, wrapped in foil and put in the oven at an average temperature for 20 minutes. Eggs are boiled, cut into pieces, mixed with greens. About 100 grams of rice is boiled. The onion is peeled, chopped, divided into 2 parts, one of which is fried, and the other remains raw. The foil is removed from the finished fish, it is cleaned of bones and cut into small pieces. Now all the ingredients are gently mixed, seasoned and salted. A small amount of broth is also added to the filling. It is better if everything is mixed with hands, and not with a spoon. A properly prepared filling is one that does not stick to your hands and holds its shape. Next, the puff pastry is rolled into a thin layer on which the fish mixture is placed, and is wrapped with it. Such a pie, the recipe of which is closest to the traditional one, should have an oval long shape, and in the middle it is necessary to leave a small seam. It is baked for about half an hour in a medium-heated oven. After that, it is pulled out, covered with a towel and left for some more time so that the dough becomes softer and more tender.

Some housewives believe that a cabbage pie should be made from unsweetened yeast dough. In this case, a teaspoon of dried yeast is stirred in a glass of warm water with a tablespoon of sugar. Salt, sunflower oil (2-3 tablespoons) and flour (approximately 4 cups) are added here. The dough is kneaded, left in a warm place to "fit." At this time, the filling is being prepared. Cabbage is chopped, carrots are rubbed, onions are chopped finely. Vegetables are fried without salt in butter for 15 minutes. Then put salt, spices, chopped herbs. Ready stuffing cools. The dough is divided into several small cakes. In each of them, the filling is laid out, the edges are slightly bent, the dough is smeared with a beaten egg on top, and the pie, the recipe of which is not too complicated even for beginner housewives, goes to the oven for half an hour.

This pastry with meat filling is equally tasty. For the test, in this case, you need half a liter of warm milk, in which a teaspoon of yeast and sugar are dissolved, a small amount of flour is added. The resulting sponge is left to rise. After it increases in volume, the remaining flour (about half a kilogram), an egg, salt and melted butter (50 grams) are poured here. The dough is left for 2-3 hours. Ground beef or pork is combined with onions, salted, peppered. The filling is laid out on the dough, the edges are chipped, and a hole is left in the middle, the cake from the pastry is put in the oven. This baking is prepared for no more than half an hour.
