Cabbage Pill with Beetroot
For Georgian spicy cabbage you will need the following products:
- white cabbage - 2 large forks with a total weight of about 6 kg;
- fresh medium-sized beets - 4-5 pcs.;
- large heads of garlic - 6 pcs.;
- medium-sized carrots - 5-6 pcs.;
- several fresh chili pepper pods (3-4 pcs., spicy lovers take more);
- peppercorns (allspice);
- drinking water with a volume of 1.5 liters;
- table salt in an amount - 2-3 tablespoons (large, with a slide);
- vegetable oil - 4 tbsp. l .;
- a glass of table vinegar ;
- Fresh dill - a large bunch.
Step-by-step technology
1st step
How is the pill prepared? Cabbage, the recipe of which we propose to study, is easy to salt. Initially cut the forks into pieces. One head can be divided into 8 large pieces.
2nd step
Peel the beets, cut them into slices or circles about half a centimeter thick. Wash the carrots, peel and cut along several parts. You can simply rub this vegetable on a grater and lay out a layer.
3rd step
Lay out the prepared ingredients in layers: beets in circles, cabbage in large pieces (sprinkle with spices), carrots and dill (chopped coarsely).
4th step
Cook the marinade. To do this, take a liter of boiling water, add salt, vegetable oil, sugar to it. Then pour vinegar. Mix. Pour the marinade over the cabbage. Place a load on top.
5th step
Cover the cabbage with a towel or gauze and leave for a day (maybe 12 hours) at room temperature. After the indicated time, try the pill to taste. If everything is normal, then you can put the cabbage in the refrigerator.
6th step
Pilyuska - cabbage, the recipe of which is suitable both for harvesting for the winter and for consumption immediately after salting. To preserve the product for long-term storage, you need to prepare jars. They should be thoroughly washed, sterilized in any way possible (over steam, in a microwave or oven).
