- Finely chop the walnuts and add to the cream. Stir everything well and place in the refrigerator.
- Now make a biscuit. Pound the yolks with vanilla and white sugar. Add sour cream mixed with yogurt, sifted flour, soda, slaked with lemon juice. If desired, you can add a little brandy, cognac or any other tincture. Knead this mass until smooth and divide into two parts.
- In the first part, send the cocoa powder, stir. Divide each two colored parts into two more. You must bake four cakes.

- Pour the icing cake on top, spread the sides of the product with it.
- Send the finished Victoria cake to the refrigerator for 4 hours.

British classic
How to make Queen Victoria's cake? It is said that this dessert was a favorite of this ruler, and, as before, it is still very popular in England. In the classical recipe, only jam was used as the filling, in the current interpretation, cream was added, more often - Chantilly cream. We suggest going further.
Since the cakes are very dense, they need to be moistened. Well, if it is a hot jam. If you purchased ready-made, see that it is thick. After heating, it will become liquid and soak the biscuit easily.
Summer berries (raspberries are used in the recipe) will give the dessert a slight sourness and freshness. But the cream here is special - cow butter, cottage cheese and powdered sugar. It is suitable as a filling for cakes, as a cream “cap” for cupcakes, good as an independent dessert.
You will need:
- four eggs;
- sugar - 250 g;
- cow butter - 250 g;
- some vanillin;
- flour - 250 g;
- 200 g of berries;

- Beat the eggs one at a time. The mass should be homogeneous and airy.
- Add lemon zest and vanilla, stir. Carefully remove the zest from the lemon so that the white layer does not hurt. Otherwise, baking will get a bitter aftertaste.
- Combine the flour with the baking powder, stir and put in small portions into the dough. The finished mixture should be thick.
- ½ part of the dough put in a form and send to the oven.
- Bake the product at 180-185 ° C in convection mode for about 35 minutes.
- Cool the finished cake on the wire rack. Bake the second half of the dough in the same way.
- Make a cream. Remember that cottage cheese should be very cold here, and cow butter, on the contrary, very soft.
- Mix all the ingredients in a bowl, beat with a mixer until air and soft mass.
- As cottage cheese, you can take Hochland or Almette.
- Now collect the cake. To do this, heat the jam in the microwave for 30 seconds so that it becomes liquid. Put the whole jam on the first cake, leaving an area of 2 cm to the edge.

A delicious Victoria cake can be made to order in many pastry shops. But you can make this dessert with your own hands in just two or three days! As a result, you will be 100% sure of the quality of the product.
On the first day, you need to bake cheesecake, biscuit and cook marmalade. On the second day, you need to boil the syrup, make a cream, collect and make a cake. It is advisable to give the product time for impregnation (at least 3-4 hours).
If you want to make a thicker cream layer, increase the number of components by 1.5 times. For decor, you can make mousse figures coated with glaze. The recipe for the Victoria cake (you can find the photo in this section) stipulates the implementation of such actions:
- Cook the biscuit first. To do this, preheat the oven to 190 ° C. In a bowl of the mixer, mix sugar with home-temperature oil, whisk until whitening for 7 minutes. Sugar will not dissolve completely - this is normal.
- Now enter one egg at a time. After each egg, beat the mixture for 5 minutes.
- Combine flour with baking powder, sift and add in parts to the dough.
- Wash the lemon, remove the zest from it and send to the dough.
- Knead the thick dough completely.
- Spread two detachable molds with a diameter of 18 cm with cow butter, sprinkle with flour (make a "French shirt"). Put ½ part of the dough into each mold. If you have one baking dish, bake one cake first and then the second.
- Bake a sponge cake for 35 minutes. It is important not to dry it. As soon as the dough starts to gold, check its readiness with a dry toothpick every 5 minutes. This biscuit is good in that it never forms a dome. Place the mold with the product on the wire rack and cool for 10 minutes.
- Then turn the form over - the biscuit should literally pop out of it. Leave it to cool completely on the wire rack. Then wrap in polyethylene and send for 3 hours in the refrigerator.
Cooking Strawberry Cheesecake

- Here, use only a detachable form, as it is problematic to get a perfectly smooth cheesecake out of the mold. Preheat the oven to 170 ° C.
- Defrost strawberries, do not drain juice. Part of the berries will go for cheesecake, and part for marmalade. In total, you need 450 g of strawberries.
- Grind the berries in a mashed blender.
- Send cottage cheese into the bowl of the mixer (well, if it is Philadelphia or Almette), starch and sugar. Stir all components at low mixer speeds. Do not whisk!
- Pour in half the egg and stir again.
- Now pour the cream, mix until a homogeneous, even glossy mass
- Send the strawberry puree into it and stir.
- Now wrap the detachable form with several layers of foil. The mold does not need to be lubricated. Pour the whole mass into it.
- Send the cheesecake dish to a large refractory dish and pour boiling water so that the product is half immersed in it. Bake for 1 hour. If the edges of the product are already seized, and the middle trembles, then the cheesecake is ready.
- Cool the product on the wire rack completely and send it to the refrigerator overnight in the mold (you can remove the foil).
Cooking Strawberry Marmalade
It must be poured onto a silicone baking sheet and then cut out circles of the desired size from it. You can also take rings with a diameter of 18 cm, cover with polyethylene and pour marmalade into them already. As a result, the layer will be thicker and less waste.
- So, put the stewpan with strawberry puree (380 g) on the stove, boil. Mix sugar with agar, pour in a thin stream in boiling puree. Cook for 2 minutes, stirring with a whisk.
- Next, pour hot marmalade on a silicone baking sheet or in iron rings covered with polyethylene, and leave for 1 hour. Better send it overnight in the fridge.
How to make syrup?
- On the second day, make a syrup for impregnation. To do this, combine in a saucepan water, sugar and lemon juice, boil.
- Cool the syrup.
Cooking cream
- Now make the curd cream. To do this, whip the cold cream to strong peaks.
- Combine the powdered sugar, whipped cream and cream cheese and beat well. The cream is ready!
Cake assembly
Cake "Victoria" receives only positive reviews. Of course, it takes a long time to prepare. But those hostesses who have implemented this recipe claim that it is worth it! Indeed, in the end, the guests are satisfied and amazed by this masterpiece and vyingly ask to provide the technology for its creation. But we continue further:
- Collect the cake. To do this, cut both cakes in half. You should get 4 identical cakes.
- Put the first cake on the substrate and brush it with a small amount of syrup using a brush.
- Then spiral down the cream (you can use a round nozzle with a diameter of 5 mm).
- From the marmalade layer by cutting 18 cm, cut two identical “cakes”. Put one marmalade layer on the cream.
- Drop cream onto it in a spiral, cover with a second cake.
- Place a layer of cheesecake on top. If it's a little broken, that's okay.
- Then do this: again cake, then syrup, cream, after marmalade and cream.
- Lay out the fourth, last cake on top.
- Cream the cream and smooth it. Send overnight in the refrigerator.
- On the third day, decorate the dessert. You can use mousse figures, mint leaves and fresh strawberries for this. Or you can simply decorate the cake with a small amount of cream and berries. Here you need only your creativity and mental attitude - no limits!
Serve the finished cake on the table. Enjoy your meal!
