Sunday of Christ is the main Christian holiday, one of the brightest holidays, symbolizing the victory of life over death, and it is no coincidence that it is celebrated in the spring. The traditions associated with Easter are among the most colorful and vivid, and we remember them from childhood. For those who fasted for seven whole weeks, limiting themselves in food, this holiday is even more awaited: after all, you can finally treat yourself to all kinds of goodies, so preparing for Easter is a whole ritual, and the recipes for the Easter table are passed on from generation to generation. And those who are not so kind to observing the canons also do not deny themselves traditional delicacies, because the Easter table consists entirely of delicious dishes. In addition to Easter and colored eggs, which invariably appear on the table in almost every house, these are all kinds of meat dishes, for example, home-made boiled pork or the usual jelly, delicious cottage cheese cake, and all kinds of sweets - the recipes for the Easter table are varied. Cooking for the Easter table takes place throughout Saturday, starting in the morning, but then the hostess is free from the hassle in the kitchen for several days: it is believed that, at least on Sunday, it is better to do nothing around the house.

So, the main recipes for the Easter table are Easter, or Easter cake, baked meat and cottage cheese cake. Let's consider them in more detail.

Easter, the main decoration of the Easter table, is made from a very rich yeast dough. Half a kilogram of flour, 200-300 grams of milk, 5-6 eggs, a packet of butter, a glass and a half sugar, salt to taste and 40 grams of ordinary yeast, or a little more than half a package of dry yeast are taken for it - since the dough is very rich, you need yeast It was 20 percent more than usual. You can add vanilla, nuts, raisins or other dried fruits or candied fruits to the dough. It is best to cook such a dough in a sparse way. Yeast is dissolved in warmed, but not hot milk, along with a little sugar and a glass of flour. The dishes with dough are covered with a towel and put in a warm place for about an hour and a half. During this time, a lot of air bubbles should form there. When this happens, you need to start mixing the melted butter with the remaining sugar, and when the sugar has dissolved and the mixture has cooled, you need to add eggs, then mix the mixture with dough, raisins and gradually add flour until a dough of such a density is obtained that it is easy removed from the hands. The dough should not be very dense - approximately, like on fried pies. Then you need to knead it properly and leave it under a towel until its volume doubles, after which you can bake a cake. You can decorate the finished Easter with glaze and sprinkle with nuts or use special toppings.

We cook boiled pork in the following way: a large piece of meat without bone (best pork ham, balyk, neck, scapula) we stuff with sliced ​​garlic into four parts, which we pre-dip in a mixture of salt and spices, rub the meat on all sides with the same mixture and wrap everything in two layers of foil so that it does not fit the meat too tightly, but is tight enough, put the package on a baking sheet and bake for one and a half to two hours. For meat, there are other recipes for the Easter table, but this one is the simplest, but the boiled pork is always delicious.

Cottage cheese cake is prepared from a half kilogram of carefully grated fat cottage cheese, 100 grams of butter, a glass of sour cream, 150 grams of sugar, three eggs. You can add vanilla sugar, salt to taste, raisins, nuts, etc. First, the butter is melted in a saucepan, then cottage cheese, sour cream and eggs are added there, everything is mixed to a homogeneous consistency, preferably with a blender, brought to a boil over a very slow fire, then it cools down. Sugar is added to the resulting mass, preferably in the form of powders, vanilla sugar and raisins. Then you need to put the mass in a mold and wrap it in gauze or cloth so that excess fluid can drain. Decorate Easter cake as you wish.

As you can see, the traditional recipes for the Easter table are not at all complicated, but the dishes turn out to be very tasty, especially since most of us have known them since childhood.
