Traditionally, this cake was usually served at such celebrations as the Trinity and the wedding. A chicken puff pastry was made with chicken, lamb, duck, nuts, beef and other various types of toppings.

There are many versions of why it was named that way. And one of them is just connected with the fact that chicken meat was used as the filling (it is the most implausible). Although in the north this dish is a small pies stuffed with fish.

For cooking, it is customary to use such types of dough as:

  • butter;
  • fresh;
  • shortbread;
  • puff.

Most often, during the creation of a pie, two types are used at once. One of them is used to prepare thin pancakes that separate the layers of the filling. And a hat is made of the second.

Traditional recipe

This is the standard version of the holiday cake. At the same time, it turns out to be extremely unusual, as it has a wide variety of tastes (thanks to a rich set of ingredients).

To create this dish you will need:

  • puff pastry - 2 layers;
  • 650 g of domestic chicken;
  • 2 onions;
  • 1 carrot;
  • 300 g of mushrooms;
  • 120 g of rice;
  • 200 ml of milk;
  • 2 eggs;
  • 400 g flour;
  • 1 tsp soda;
  • 50 g sour cream;
  • 150 g butter;
  • 50 ml of vegetable oil;
  • greens - 1 bunch;
  • salt, pepper - added depending on preference.

Before you start creating a kurnik from puff pastry, you need to take care of all the available components in the following order:

  1. Peel carrots and onions. Rinse the chicken meat. Put everything in a pan with cold water, adding a few bay leaves and peas of black pepper. Leave until water begins to boil.
  2. Reduce the fire to a minimum, remove the resulting foam. Keep on the stove until the meat is ready.
  3. At the end of cooking, remove the chicken and leave it to cool. Then split into small fibers. Salt and pepper. Strain 80 ml of broth from the pan.
  4. Rinse rice. Pour in water and cook until tender, adding salt.
  5. Wash and cut mushrooms into thin plates. Put in a pan, adding a little oil. Fry until all the liquid has evaporated, and the pieces are covered with a golden brown.
  6. Finely chop the onions and carrots. Fry in vegetable oil until soft.
  7. In a deep bowl, put mushrooms, onions, carrots, herbs and rice. Salt and pepper to taste. Mix.

Dough

Now you can start cooking pancakes and puff pastry hats for the henhouse.

  1. In a deep bowl, mix milk, chicken egg, salt and vegetable oil.
  2. Add 70 g sifted flour. Stir with a whisk until a batter of uniform consistency. No lumps.
  3. Fry pancakes from the resulting mixture.

Assembly

  1. Roll out one of the layers of dough and cut a circle. This piece will be the basis of the cake. At the end of the processing, lay it at the bottom of the dishes in which the dish will be made.
  2. Place a pancake on the dough and lay the filling on top of it.
  3. Cover with a new pancake and lay the meat on top. Follow steps 2 and 3 until the pancakes run out.
  4. Roll out the remaining dough, cut a circle out of it and cover the pie, connecting the edges with the base. At the top, carefully cut a small hole. If desired, the hat can be decorated.
  5. Lubricate the top of the chicken puff pastry with a beaten egg. Bake the dish in the oven for 40 minutes at a temperature of 180 degrees.
  6. Once the cake is cooked, remove from the oven. And pour the chicken stock, previously set aside, into the hole made.

THE NOTE! To decorate the dish, you can use the rest of the dough, cut into small circles.

Puff pastry with potatoes

This recipe is slightly different from the previous one not only in the filling, but also in the method of preparation. In a specific embodiment, the presence of pancakes is not required. The dish will have only one main layer of filling.

To prepare this cake you will need:

  • 1 kg of puff pastry without yeast;
  • 5 potato tubers;
  • 300 g chicken breast;
  • 1 carrot;
  • 1 egg
  • salt and pepper are added depending on preference.

Cooking process

  1. Put the dough where the temperature level does not exceed room temperature.
  2. Peel the potatoes and cut into small cubes.
  3. Rinse the breast. Cut into small pieces and add to potatoes.
  4. Wash the carrots and grate in the same dish. Salt and pepper everything. Mix.
  5. Cut the dough into 2 parts and roll into pancakes. One big one is for the foundation. The second is smaller for the hat.
  6. The basis is to lay the bottom of the dishes, in which the preparation of the dish is supposed, and lift along the walls, forming a kind of bowl. Put the filling and cover with a second pancake. Combine both pieces of dough.
  7. Bake for 40 minutes at a temperature of 180 degrees.

Kurnik with white fish

To make a pie according to this recipe you will need:

  • 1 kg of puff pastry without yeast;
  • 2 onion heads;
  • 500 g of white fish;
  • 4 potato tubers.

Add salt and pepper depending on taste preferences.

Cooking process

  1. Rinse fish under cold water and cut into medium-sized cubes.
  2. Peel the onions and cut into thin half rings.
  3. Peel the potatoes and cut into 2 mm wide plates.
  4. Put all the ingredients in one dish. Salt and pepper. Mix.
  5. Divide the puff pastry into 2 parts. Both roll into pancakes of medium thickness. One should be more - for the base, and the second less - for the cap.
  6. Lay most of the dough on the bottom of the baking dish. Pull on the walls to form a bowl.
  7. Spread the prepared filling, evenly distributing inside the dough.
  8. Cover the workpiece with a second piece of dough and fasten with fingers with the base. Grease a hat with a beaten egg. Cut a hole in the center so that steam escapes during cooking.
  9. Place the dishes with the pie in the oven, preheated to 200 degrees. Bake the dish for 40 minutes.

ATTENTION! If you prefer a crispy crust, then the duration of the preparation of the henhouse can be increased to 45 minutes.
