Japanese pancakes are familiar to every Japanese - this is a traditional dish that looks like two cakes with a filling inside. Dorayaki didn’t always look like this, earlier it was made from just one pancake. The recipe was modified by the Usagiya bakery in the twenties of the last century.
The wonderful name "dorayaki" literally from Japanese translates as "fried gong." According to legend, this type of confectionery was invented by a poor peasant, frying a Japanese pancake on a forgotten gong of a visiting samurai. A musical instrument was used instead of a frying pan.
Baking Japanese pancakes, the recipe of which has become popular outside of Japan, you can use anko paste, which is prepared from adzuki beans, cane sugar and salt, as a filling. In local bakeries, they are used to adding chocolate and thick jam to dorayaki, as for European tourists the bean filling is not sweet enough to taste.
Small Japanese pancakes: how to cook?
Dorayaki needs simple ingredients to make, which you can easily buy at the nearest supermarket.
- Eggs - 2 pcs.
- Flour - 250 g.
- Powdered Sugar - 160 g
- Baking powder - 1 tsp
- Honey - 1 tbsp
- Water - 200 ml.
- Red Beans - 1 tbsp.
- Sugar - 120 g.
First you need to cook the pasta. To do this, rinse the beans and pour water so that it completely covers the beans. Put the container with beans on the fire and wait for boiling, then add granulated sugar. Cover the mass with a lid and reduce the power of the fire so that the filling slowly cooks until cooked. The pan can be removed from the stove as soon as the beans become soft, while the water in which it was boiled is drained into a separate bowl.
Crush the beans to a puree state and put on the fire again, adding syrup from sugar and water. The pasta is considered ready as soon as it acquires a burgundy color and a uniform consistency.
Now you need to cook the Japanese pancake itself, to which the filling will be added. Prepare the dough: mix flour and powdered sugar, baking powder. Add the remaining ingredients to the dry mixture and beat the mass with a whisk until smooth.
For frying, it is better to use cookware with non-stick coating - it is better to remove pancakes from it, without fear of damaging them. Grease the bottom of the pan with vegetable oil (olive or flax seed oil), and then pour a small portion of the dough. Each pancake needs to be cooked over medium heat for three minutes from two sides. In order for each pancake to have a uniform color, it is necessary to ensure uniform heating of the pan. Feed dorayaki
Before serving a Japanese pancake with a filling, one of the cakes should be greased with a paste of beans, covered with a second cake and presented warmly to the guests. Dorayaki eat as an independent dish, but you can also serve brewed tea or coffee if desired.
Storage
For longer storage, dorayaki can be wrapped in cling film and refrigerated, and warmed slightly to room temperature with a microwave oven or pan before use. It is important not to overheat the product, otherwise the filling will get a different taste.
