What is a muffin, probably, we already know everything, and children in the first place! The American variation of cupcakes, round (oval) baking of small sizes, mostly sweet, the components of which include various kinds of fillings, have firmly won the hearts of lovers of delicious. And muffins on kefir, characterized by increased tenderness and airiness, and even more so. And cooking them is pretty easy and fast. Well, will we try today?
Something about the composition
The largest muffin is placed in the palm of an adult. And the following products can be added to the dish: blueberries and raspberries, nuts and bananas, peaches and oranges, lemons and cinnamon, chocolate and coconut flakes - and much more. In general, there is where to go for a culinary fantasy! At the same time, classic kefir muffins are very fast pastries that go well with morning coffee, tea, mate, with afternoon compote or milk.
A bit of history
This food is considered brought to us from America. And the dish gained popularity in the United States after being sold in Chicago at the World's Fair (1893). True, the ancestors of today's muffin were not so sweet and did not have so many varieties. But even then they were consumed as quick and practical food. Subsequently, the recipe was reformed, various fillings were added, muffins appeared on kefir or on other bases.
The simplest
For their preparation we will need: two glasses of kefir, a glass of sugar, a couple of eggs, grams of 300 sifted wheat flour of the highest grade, a spoonful of three vegetable oil, a bit of vanidine, a little baking powder for the dough. And we start cooking kefir muffins.
- Mix in a deep container vanillin with flour (pre-sift it!), Baking powder with sugar. If desired, add grated nutmeg.
- In a separate bowl, beat the eggs and add the kefir plus vegetable oil. Mix.
- Then we combine both mixtures into one mass, stirring thoroughly without any lumps.
- We distribute the resulting thick dough into baking dishes, but do not fill them to the very top.
- Bake at 180 degrees for 20-25 minutes. We take out the finished baked goods from the oven. It is most convenient to make kefir muffins in silicone molds. They are always obtained rosy, tasty, lush and fragrant. They are very convenient to remove without fear of breaking the shape.
Kefir Chocolate Muffins
For their preparation we will need: a glass of kefir (less fat), a glass of sifted flour, half a glass of sugar, 2 eggs, 3 tablespoons of cocoa powder, a small spoon of baking powder for dough, vegetable oil - 2 tablespoons, vanilla sugar in the amount of 3-5 grams ( bag).
- Pour kefir into a deep container, mixing with baking powder and vanilla. Mix thoroughly and wait for air bubbles to stand out.
- Beat the mixer with eggs (both protein and yolk), gradually adding vegetable oil and sugar to the mass. Combine the whipped mixture with kefir.
- Mix well. Add sifted flour and cocoa powder. Knead a smooth and uniform dough average in density (you can do this with a large spoon). If the dough seems too liquid, then add more flour.
- Preheat the oven (180 degrees Celsius). We take silicone molds (as already mentioned, they are almost perfect for baking this dish), pour 2/3 of the volume into each form of dough. We put it in the oven and make sure that the chocolate muffins on kefir are well baked without burning. The whole procedure will take about 20 minutes. We take the molds out of the oven, let them cool slightly. We take out American muffins and serve.
A simple recipe for kefir muffins with cherries
We need: a pair of eggs, sugar - 100 grams, butter - 100 grams, wheat flour - a glass, medium-fat kefir - a glass, cocoa powder - a couple of spoons, cherries - 100 grams, a little baking powder for dough.
- Mix the flour and baking powder.
- Knead the softened butter and grind it with sugar. Gradually pour kefir, stirring until a homogeneous consistency. And then gradually add the flour, stirring constantly, until our dough for muffins is similar in its consistency to sour cream. Add to the dough and cocoa powder, again kneading.
- We fill the molds with the dough a little more than half, put the cherry or two on top, dipping them in the dough (itβs good to take fresh berry if the season, carefully removing the seeds from it), and send it to the oven heated to 180 (20 minutes). We take the muffins on kefir from the oven, let it cool slightly and serve.
- Tip: if you cook, for example, in the winter, then you can take freshly frozen berries. Pre-defrost it in accordance with all the rules - no microwaves and hot water, let it thaw naturally. Then we take out the bones and use them for their intended purpose. And another option is to use cherry jam as a filling.
Taste of summer - even in winter
In this case, we suggest using blackcurrant - either fresh or frozen.
- Soften butter (for this purpose we use a microwave).
- Add sugar and kefir with eggs to it. All mix well. Pour soda with flour in not too large portions, stirring thoroughly and constantly.
- We sort through the currant, wash it and dry it. Add the berries to the dough itself, mix gently and arrange according to the silicone tins. We put in the oven heated to 180 (20-25 minutes).
- Tip: we determine the preparedness of the dish with a wooden toothpick - if there are no signs of raw dough left after sticking it into the browned product, then everything is ready!
With raisins
We take a glass of kefir and half a glass of sugar, a couple of eggs, a glass of flour, half a glass of raisins, a little vegetable oil, baking powder, vanilla sugar. You can add a little crushed walnuts to enhance the taste.
- In a deep container, mix the baking powder with sugar, vanilla and flour.
- Separately, beat the eggs with vegetable oil, adding kefir. We combine both the resulting mixtures, introduce raisins with nuts, knead everything thoroughly.
- We spread the dough on silicone (or any other) baking tins, filling them in about a little more than half. We put in the oven warmed up to 180 for 20-25 minutes. Cool the finished baked goods and serve them with tea or coffee.
