A bit about Sunberry
The recipe for these berries should take into account their bright intense taste. They are saturated with trace elements, so it will be worthwhile to try to preserve all the useful properties in the cooking process. Sunberry is usually harvested in September. Some enterprising gardeners cover the plants with film. This allows you to feast on the fruits until the onset of the snowy winter months. It is also possible to store a sunberry for a long time (a cooking recipe does not always require the use of fruits removed from the bush) in a cool room for up to one month. Before cooking the berries are always scalded - this removes the specific nightshade taste that they have.
Dried Sunberry
The recipe involves keeping in the oven at a low temperature. You can use a special drying unit.
The temperature should be between 50 and 60 degrees Celsius. Dry the sunberry from two to four hours. The berries are periodically mixed. Before drying, they are washed and sorted. Spread on a baking sheet in one layer. In the sun, these berries are usually not dried - this can lead to the loss of the beneficial properties of sunberry.
Liqueur Recipe
It will take a kilogram of berries and 1.2 kilograms of white sugar. After mixing the ingredients, cook over low heat until the syrup becomes thick. Cool. Pour quality vodka - it should be as much as ready-made syrup. After mixing, bottle, store in a cellar or other cool dark place. In order to make wine, the berries must first be crushed, and then covered with sugar.
Putting in a bottle, pour boiled cold water to the neck and put on a rubber medical glove. During the month, the wine will ferment, and then it can be filtered and bottled for storage.
Other Sunberry blanks
Dried berries can be frozen on flat pallets if you have a good freezer. After the fruits have hardened, they are laid out in bags, tied, stored for up to a year. You can pour the washed berries with sugar and already in this form, freeze in plastic containers. You can make unsweetened vegetable caviar with the addition of sunberry. For this, in addition to a kilogram of berries, you need 500 g of good sweet carrots, three onions, vegetable oil for frying, greens, sugar and salt. It is better to cut the sunberry in half and fry in this form. Separate sauté sliced vegetables. Pass all the ingredients through a meat grinder with herbs and spices, boil, put in banks.
