Shrovetide has long died out, and pancakes with cottage cheese always want. This sweet dish is associated with my grandmother and her house in the village. Surely, pancakes with cottage cheese remind many a happy and carefree childhood. The filling, of course, can be different, some prefer sweet pancakes to dessert, and someone does not mind tasting hearty pancakes with meat filling. This is a matter of taste.
Pancakes are considered to be a traditional Russian dish, Peter I himself was also enjoying it, especially during the week of Shrovetide.
There are no strict rules for their preparation, everyone cooks them in their own way: someone prefers pancakes on yeast dough, who likes whey or milk dough , and someone else uses kefir. There are many recipes, but each family has its own. And I will share the recipe of my beloved grandmother, her pancakes are always rosy and crispy.
In order to make pancake dough, I take 2 eggs per liter of milk. Beat them with a pinch of salt and sugar until fluffy foam (they mutually enhance the taste, so a pinch will be enough), then gradually introduce the flour. I take so much flour on the eye so that the dough comes out thin. Thin pancakes are made from it, if you take more flour, they turn out thick. Well, of course, here everyone decides what kind of pancakes they want, thin and delicate, or thick and satisfying. Then I heat the pan, it should be very warm so that the pancakes do not stick, in the poorly heated pan, the first pancake is always lumpy. Next, grease a preheated pan with oil and bake the first pancake. After that, add a little vegetable oil to the dough and no longer need to lubricate the pan.
When all the pancakes are ready, go to the filling. Curd filling for pancakes will appeal to everyone, both children and adults. Cooking it is easy and simple, and most importantly it turns out delicious. For the filling, we need a pack of low-fat cottage cheese (since the pancakes are fried in oil, it is better to use it so that the pancakes with cottage cheese do not turn out to be too fat), a tablespoon of sour cream (also non-fat), sugar to taste. We put all the products in a bowl and rub with a fork until the sugar dissolves. For taste, you can add a little vanillin.
Pancakes and filling are ready, now we wrap the cottage cheese in them: put a tablespoon of the filling on the edge of the pancake, smell the sides and twist in the form of a roll. And so we do with everyone. That's all, pancakes stuffed with cottage cheese are ready.
I want to note that you can experiment with the filling. Cottage cheese is a product that goes well with fruits and chocolate, you can also use dried fruits. For example, crushed prunes, dried apricots, raisins can be added to the previous recipe. Get pancakes with vitamin filling. Nuts are very useful, so they can also be safely put in cottage cheese.
There is another glorious recipe that I often use. We prepare the dough in the same way, but we bake pancakes on only one side, that is, the second side of the pancake will be pale and not fried. Then I wrap the filling so that the uncooked raw side remains outside. After I fry the pancake with the filling on both sides in a preheated pan. With this method of cooking, the cottage cheese in the pancakes melts a little and becomes viscous, tastes like cream cheese. It turns out very appetizing.
If desired, you can add a touch of oriental taste in the filling - cinnamon, my husband especially likes this option. Such pancakes with cottage cheese are not ashamed to serve as a dessert on the festive table, they are also good in taste and look very appetizing, it will be difficult to resist.
