Vegetables and legumes are characterized by increased usefulness for the human body. In addition, they are perfectly combined with each other. And in the post dishes from these components will be hearty enough to easily reach meat days. And for the winter, such preparations will be very handy - the same beans with eggplant are very encouraging and will please the family in the cold months. It is difficult to imagine a vegetable season at all without such dishes.
Eggplant with String Beans
Most often, our people use beans of a bean variety - usually white, somewhat less often red. Recently, however, people have tasted and learned how to cook green beans with eggplant. The recipe is complemented by a few more vegetables - and a wonderful side dish comes out. It compares favorably with a similar one, but with beans, the speed of preparation, since it does not require a long preliminary processing of beans. Two little blue ones are cleaned, cut in circles, salted and drained for about ten minutes. Then they need to be washed from the released bitterness and squeezed a little. A little oil is poured into the stewpan, our slices are laid out, on top are cubes or rings of two bell peppers, the chopped onion is poured, and already a third of a kilogram of bean pods is poured on it. Tomato slices are laid at the very top, and such a peculiar sauté is stewed for about a quarter of an hour. At the end, beans with eggplant are sprinkled with herbs (a mixture of dill, cilantro and parsley). The dish is perfect for meat, fish or a solo will perform no less successfully.

Beans with eggplant: recipe with mushrooms
Mushrooms are compatible with any vegetables and give the final dish a special charm. In our case, any, even quite tasteless champignons are suitable. Three hundred grams of chopped mushrooms are placed on a dry frying pan (so they will quickly give away excess water). Five minutes later, a little oil is poured and the onion is poured. When it softens, cubes of eggplant and two tomatoes are added. Salt, pepper, preferred spices - and five minutes under the lid, simmer. Then beans are poured (canned in tomato or pre-cooked) - about a glass. Almost immediately, chopped spinach and a few crushed garlic cloves are added to the beans with eggplant and mushrooms. Three minutes of boiling together, and dinner is ready.
Unusual hummus
Most people imagine beans with eggplant only as a side dish. However, you can make a wonderful appetizer from them, which is convenient to spread on bread. Beloved in the Middle East, hummus is made from chickpeas. And we will cook it in our own way. White beans can be taken canned in their own juice, and can be boiled. For 400 grams of beans, large eggplant is taken and baked whole in the oven. Then it is peeled off, put in a blender along with beans, three tablespoons of tahini (this is sesame seed paste, sold in all supermarkets) and three garlics and mashed. Then, slowly squeezed juice, squeezed from half a lemon, and a quarter cup of good olive oil. When the paste becomes homogeneous, its salinity and spiciness are checked, and if necessary, it is regulated. Everything, you can smear a sandwich. On top of it, if desired, you can sprinkle with red pepper, zira and parsley.
Fantasies on the Lobio Theme
Traditionally, this Georgian dish is made only from beans. However, in their pure form they are not to everyone's liking, but to someone else seem too heavy for the stomach. We suggest you to improve a little lobio and enjoy it with a light heart. A third of a kilogram of sugar beans is boiled in accordance with all the rules. A large onion is chopped finely and fried in a cauldron. As soon as the onion becomes transparent, carrot straws are added to it. We do not recommend rubbing - it will turn out to be sluggish. In the pan at this time, the cubes of two eggplants are browned. When they get an even brown color, pour to fry. At the same time, small squares of bell pepper are added to it. Five tomatoes and as many garlic cloves are laid in a blender. This mass is poured vegetables. Parsley with cilantro crumbles next and, together with the beans, goes to the cauldron. After salting and seasoning, the lobio should languish for a quarter of an hour under the lid. If you want to close such eggplants with beans for the winter, they are laid out hot in cans, vinegar is poured under the lid (a spoon on a half-liter dish), and the containers are corked.

Winter salad
While vegetables are available, you need to take care of your future and roll up an eggplant salad with beans, which will brighten up the winter experience. A pound of dry beans is soaked for the night, and in the morning it is cooked until half cooked. One and a half kilograms of tomatoes are mashed with two heads of garlic. What to use in this case - a food processor, a blender or a meat grinder - does not matter. A glass of sugar, two tablespoons of salt, half a liter of sunflower oil and half a glass of 9 percent vinegar are mixed in the mass. Pouring boils for about five minutes after it boils. Then half a kilogram of bell pepper, the same amount of carrot, large slices of two kilograms of eggplant and beans are introduced into it. Everything is cooked together for 40-50 minutes, put up in cans, clogged and wrapped in warm until cool.
