All pasta, the basis of which is wheat flour and water, Italians made it a rule to call pasta. In each region, a certain type of pasta is popular, which its residents cook in their own way, giving the dish a special sound. When preparing pasta, local gastronomic and cultural traditions are also taken into account.
Classic recipe
Especially tasty and tender pasta is obtained if its main element was prepared independently, and not bought in a store.
This will require:
- 3 eggs,
- 2 tbsp. l water,
- 400 grams of flour
- a pinch of salt.
The recipe for homemade pasta suggests that thoroughly beaten eggs should be mixed with sifted flour, salt and water. Knead elastic smooth dough, which must be left covered with cling film for half an hour. Divide the dough into 3 parts and roll them into thin layers. After that, fold and cut into small strips (width approximately 0.6-0.8 cm).
Carbonara paste
Carbonara is a spaghetti, in which small pieces of bacon are added, pre-mixed with a special sauce made of pecorino romano (a special seasoned cheese made from sheep’s milk), parmesan, eggs and spices. The dish has a long history, because it was invented in the twentieth century. This is a traditional meal for Lazio, the region with its capital in Rome.
We will need the following ingredients:
- 300 grams of spaghetti;
- 100 grams of bacon;
- 4 yolks;
- 100 ml cream (fat content of 35% is perfect);
- 50 grams of grated parmesan;
- 2 cloves of garlic;
- parsley (2 small branches will be enough);
- pepper (professional chefs always use freshly ground, because it is more fragrant);
- salt.
Carbonara cooking steps
The preparation of carbonara paste includes the following steps:
- Fry the bacon into cubes in olive oil.
- Boil spaghetti in salted water. Make sure the cooking condition is al dente. To achieve this, you need to get pasta from the pan exactly 1 minute before the time recommended on the package.
- In a separate bowl, mix the cream and eggs (they need to be beaten as thoroughly as possible), as well as salt and pepper.
- Put the bacon on a plate, and brown the garlic in the remaining oil. Put spaghetti there, remove from the pan. Add the sauce and mix well, making sure the eggs are curled. After that, you can add bacon. Season with salt and pepper.
When serving, sprinkle with grated Parmesan, using parsley as a decoration.
Pasta bolognese
As you might guess, Bolognese sauce came to us from Bologna, whose inhabitants cook it with green lasagna and fresh tagliatelle.
The preparation of pasta with meat sauce Bolognese requires the following ingredients:
- 100 grams of ground beef,
- 80 grams of spaghetti,
- 40 grams of parmesan
- a pinch of dried basil,
- bulb,
- clove of garlic,
- 2-3 tomatoes
- a pinch of oregano
- 2 tsp tomato paste
- a pinch of sugar
- 2 tbsp. l red wine.
The recipe for pasta preparation includes the following steps:
- Fry the minced meat in vegetable oil until it has a beautiful brown tint. After this, you need to drain the remaining fat and add the onion (pre-chop it) and garlic, continuing to cook for another 2-3 minutes.
- Further in the pan you need to add the remaining ingredients and continue to simmer another half hour, closing the lid. This time is enough to make the sauce thick.
- Cook pasta to al dente state, put them on a plate and gently spread the prepared sauce on top.
Ready-made meal to sprinkle with grated parmesan to complete the presentation and give a more delicate taste.
Pasta arabyata
Although arabyata is considered a classic Italian dish, it was invented not so long ago, only in the twentieth century. Due to the mixture of red pepper, pepperoni and garlic, this paste is often called "evil".
Such components will be needed:
- 300 grams of Italian pasta,
- 1 clove of garlic
- 400 grams of tomatoes (canned),
- basil,
- parsley,
- hot red pepper (crushed),
- olive oil.
Cooking pasta consists of the following steps:
- Fry the garlic until golden and at the same time pepper. Add tomatoes to them with juice and continue cooking.
- Boil the spaghetti and then mix with the prepared sauce.
Primavera paste
This is a classic pasta that is prepared with fresh vegetables, which is why it is often called spring. Since the dish was invented by Italian immigrants in the United States, it is considered Italian-American. And in 1977, a whole article appeared about him in the New York Times. The taste of spaghetti primavera is based on the dominance of vegetables. Do not forget about the aroma and bright colors, thanks to which the preparation of pasta with a photo of the served dish will become a real decoration of any collection.
The following ingredients will be required:
- 500 grams of pasta;
- 2-3 carrots (for a dish they need to be cut into strips);
- 350 grams of broccoli;
- 200 grams of young green peas;
- 150 grams of cherry tomato (this is about 10-15 pieces, depending on the size of the vegetable);
- 1 bell pepper;
- Parmesan;
- 5 cloves of garlic;
- salt and pepper.
Cooking is divided into the following stages:
- Heat the olive oil in a pan, and then fry the garlic on it (finely chop it beforehand). 30 seconds will be enough for this procedure. As soon as the garlic begins to change color, it will need to be removed from the heat. Now you can add pepper and cherry, mixing the dish well.
- Boil the paste until al dente, adding vegetables in the last few minutes (2-3). Drain the prepared spaghetti.
- When serving, sprinkle the paste with grated Parmesan.
Lasagna pasta
Lasagna is a pasta that has the shape of a flat rectangle or square. Layers of filling depending on the region may be different and include tomatoes, minced meat, spinach, other vegetables.
To make a paste at home, you will need the following ingredients:
- 375 grams of lasagna plates,
- 500 grams of ground beef,
- 400 grams of fresh tomatoes,
- 150 grams of mushrooms (chopped),
- 2 tbsp. l olive oil
- onion (grind),
- 2 cloves of garlic (mince)
- ¼ cup tomato paste,
- 0.5 cups of red wine,
- parsley leaves (2 tablespoons),
- 0.5 cups grated parmesan,
- 1.5 cups of grated cheese (any),
- 2 cups of milk
- ¾ cup cream
- 2 tbsp. l flour
- 125 grams of soft cheese (e.g. ricotta).
Lasagna Cooking - Steps
- The oven must be heated to a temperature of 180 degrees. Grease the baking dish.
- Heat the oil using a large pan, and then fry the garlic and onions in it. In order for them to become soft, it will be enough 4-5 minutes. After add minced meat and cook for another 4-5 minutes. Then introduce the mushrooms, and after 2-3 minutes - tomato paste. Now is the time to add wine with tomatoes, leave to simmer for 10 minutes to partially evaporate the liquid. At the final stage, pour parsley, salt and pepper the filling for the future lasagna.
- Recipes for making pasta at home certainly include cooking white sauce. For it, you need to melt the butter in a pan, then pour the flour and cook for a minute on high heat, stirring thoroughly. Now you need to remove the flour from the fire and add milk to it, mix well and put it on the fire again. After the mixture boils, reduce the heat and cook until thickened. Then you need to add ricotta, pepper and salt the sauce.
- In a form that will be used for baking, put a sheet of lasagna, having previously trimmed the excess at the edges. After - put half the minced meat, and then pour the sauce (also use half). Sprinkle ¼ of cheese. Make another same layer on which you need to put a sheet of dough.
- Beat cream with an egg in a separate bowl, and then pour them with lasagna. Sprinkle cheese on top and put in the oven. Half an hour will be enough for baking. It is important that a golden crust appears. Immediately before serving, it is recommended to let the dish brew (5 minutes is enough for this).

Pasta with Pesto Sauce
Ingredients:
- 340 grams of pasta;
- ¾ basil leaves;
- 0.5 cup parmesan (in grated form);
- 3 tbsp. l pine nuts;
- a third of a glass of olive oil;
- 2 medium sized tomatoes;
- 2 cloves of garlic;
- a third of a glass of cream (give preference to a product with a high percentage of fat content);
- a piece of butter;
- pepper (Italians prefer to use freshly ground);
- salt.
The preparation is very simple and includes the following steps:
- Grind pine nuts, parmesan, garlic and basil in a blender. Salt and pepper the dish to taste. Now pour olive oil in small portions and mix thoroughly.
- Cooking pasta according to this recipe suggests that you need to heat the cream in a small saucepan, then add the butter and wait until it melts. After that, add pesto to the pan and mix well.
- Put the boiled pasta in a deep dish, and then mix them with pesto. After you need to add the tomatoes, previously diced.
Fragrant shrimp paste with tomato and wine sauce
Homemade pasta always turns out to be very tasty, but every housewife still wants to make a real dish of restaurant cuisine. With this recipe, you will certainly be able to cook delicious food.
The following components are needed:
- 400 grams of any pasta (e.g. spaghetti);
- 350 grams of shrimp;
- 2 tbsp. l butter;
- 300 grams of tomato (first you need to cut them into cubes, then you get about 4 cups);
- 3 cloves of garlic;
- dry white wine (1 cup will be enough);
- 4 tbsp. l olive oil;
- salt, pepper, spices (special seasonings for seafood are sold, they are perfect).
Stages of preparation:
- Heat olive oil in a pan, and then add garlic to it and fry for 2 minutes. Then you need to introduce the tomatoes and pour the wine, continuing the stewing for half an hour. Salt and pepper the dish.
- Season boiled pasta with butter and mix.
- Fry the shrimp in a pan and add the tomato sauce to them.
- Put the pasta on the plate, add the shrimp, pour the sauce.
