Tiramisu: coffee recipe

Let's start with the main components of tiramisu: mascarpone cream and Biscotti biscuit cakes . We heat one liter of fat cream (from 25 to 35%) to t 80 degrees, add 3 tablespoons of lemon juice and heat on the slowest fire for about 10 minutes. We put it on cheesecloth and leave it overnight to strain. The cream is ready.

Now the cookie. Grind three yolks with 75 g of powdered sugar and beat well to a cream. Then gradually introduce 75 g of flour. Knead the dough (it will turn out very thick), then we introduce 3 whipped proteins into it. We cover the baking sheet with paper and use a confectionery syringe to squeeze cookies onto it, sprinkle with powdered sugar.

So, 250 g of strong expresso needs to be mixed with 60 lm of coffee liquor (can be replaced with Amaretto). Rub the yolks with 80 g of powdered sugar, whisk the whites. We mix the mascarpone, gradually introducing the yolks into it, and then the proteins. We put it in the refrigerator for a while. Dip half the Biscotti cookies in coffee with liquor and put in a mold. Put half of the mascarpone cream on top. Then we put the second layer of Biscotti and also fill it with cream. Sprinkle with grated chocolate (about 30 g) on ​​top and refrigerate for 2 hours. The dessert is ready.

Tiramisu: cherries recipe

Beat 500 g of mascarpone, a spoonful of vanilla pulp, the same amount of cherry liqueur and 2 tablespoons of sugar using a mixer until airy. In 250 g of sweet cherry, remove the seeds. We take 4 tall glasses, put a biscuit in each, put cherries and cream, cover the glasses and leave them in the refrigerator for the night. Before serving, sprinkle dessert with grated chocolate or cocoa and decorate with cherries.

Tiramisu: a recipe for cooking with berries

Beat five proteins well, gradually introducing 50 g of sugar. Separately, beat the yolks, also pouring 50 g of sugar in them, and another 3 tablespoons of lemon or orange syrup. Then add 500 g of mascarpone cream and mix until smooth. Then, in a spoon, inject whipped whites. Half the resulting cream must be laid out in a mold, and on top lay a layer of biscuit cookies, dipping each in syrup (lemon or orange). The next layer will be chopped kiwi (4 pcs.) And 200 g of strawberries. Put another layer of cream on top, and then 100 g of raspberries. Then refrigerate for 1 hour.

Beat 3 egg yolks, 35 ml of white Marsala wine, 25 g of powdered sugar and 250 g of mascapone. We mix 3 tablespoons of black and strong coffee with 40 ml of wine and dip biscuit cookies in this mixture. Then put this cookie on the bottom of the mold, put the cream on top, 1 banana cut into rings and 25 g of shabby chocolate. Then repeat the layers.

This is a very simple tiramisu recipe that can be prepared for those who for some reason do not eat eggs. Whip 150 ml of fatty (35%) cream into a thick foam. In another bowl, beat 250 g of mascapone, adding 50 ml of condensed cocoa and a spoonful of sugar. Then we combine both masses and put in the refrigerator for 1 hour. Put a layer of Biscotti cookies on a plate and fill it with impregnation. The impregnation is prepared as follows: brew strong and very sweet coffee, 50 ml of which we mix with the same amount of creamy liquor (for example, Beilis). The liver should be slightly saturated, after which it can be filled with cream. Traditionally sprinkle the top with grated chocolate (1 bar).
