The word "hodgepodge" itself appeared later than "villager", however they call the same dish. The explanatory dictionary of S.I.Ozhegov explains that hodgepodge is a thick fish or meat soup with hot spices, as well as stewed cabbage with meat, mushrooms, fish. Not surprisingly, the phrase "hodgepodge team" began to be used in a figurative sense when they want to show the heterogeneity of the components in something.

The constant ingredients of the hodgepodge are pickles, spicy seasonings, herbs.

So, how to cook a hodgepodge team? In general, the preparation of this dish can be divided into several stages.

Bouillon. Before you prepare the hodgepodge team, you need to cook the broth. It will require 1-2 grades of meat products. It can be: beef ribs, veal, beef kidneys and others. After half an hour of cooking, add pepper and roots, half a portion of salt to the broth. When the broth is completely ready, it needs to be filtered, the bones taken apart, and the meat cut into strips.

Grill. It will also require 2-3 grades of meat, for example, pork shank, chicken, smoked sausage, ham, boiled sausage, sausages, etc. Each kind of meat is fried in oil separately, then you need to cook a frying in the same oil. Spasser the onion, add carrots, flour, tomato paste (or sauce, or juice) and prepare the sauce. Then combine the meat products and the sauce, stew well.

Completion. Potatoes are put in a pan with broth, then meat, roasting, spices, sometimes onions separately spassed with flour, bring the hodgepodge to readiness.

What to do with pickles? Most often they are peeled, laid in the broth. However, in some recipes, cucumbers are added to the frying, and then combined with the broth.

How to cook a hodgepodge with sausage? This is a fairly simple recipe that can be whipped up. Heat 50 g of pork fat in a pan, fry sausages (ham, smoked sausage, sausages 70 g each). Separately, finely chopped onion in vegetable oil, add tomatoes (pasta or fresh tomatoes), chopped carrots, simmer. Peel the cucumbers, cut into strips. We spread in boiling salted water sequentially: fried meat products, stewed vegetables, pickles. Boil for a few minutes. Sour cream and parsley will decorate a quick hodgepodge.

How to make a cabbage hodgepodge? For this hodgepodge you will need: 1 cup salted mushrooms and sauerkraut, 100 g dried mushrooms and sour cream, 1 carrot, greens and parsley root, salt, pepper, vegetable oil 1 tablespoon.

Dried mushrooms should be boiled over low heat, add salted mushrooms, cabbage, carrots, cut into strips, cook until vegetables are ready. Pour in vegetable oil, add chopped parsley root, salt and pepper to taste.

Fish hodgepodge is no less successful. Try to cook it as follows. Cook the fish stock. We prepare the seasoning for the hodgepodge separately: stew 1 finely chopped onion in 1 spoon of vegetable oil, add 1 carrot, sliced ​​in half circles, and parsley root, then 1 spoon of flour, 2-3 tablespoons of tomato paste. Combine with strained broth, dip the fried small pieces of fish (very tasty - sturgeon, pike perch, stellate sturgeon), 2-3 peeled and sliced ​​pickles, 4-5 potatoes, peeled and cut into half rings in a pan. At the end we put olives, cucumber pickle and chopped greens.
