In order to cook a turkey according to this recipe, take an uncut carcass, flour (4 tablespoons), butter (250 g), salt, bay leaf, a little pepper.

For the broth you will need: celery petioles, peas, 1 carrot, half a medium onion, basil or parsley.

As flavorings, you can use lemon, thyme, sage, rosemary.

First you need to gut the carcass, cut off the ends of the wings and the neck. Now the turkey should be well salted and pepper both outside and inside. Put the cut off parts of the bird into the pan, fill it with a liter of water and place on the stove. After the water begins to boil, remove the foam and add all the other components of the broth. The result should be about half a liter of rich broth.

Now take prepared flavors and 70 grams of oil. You need to start a turkey starting from the neck. After this, it is necessary to tie both legs and fix the carcass with a special spoke. Then put the turkey in the baking dish and put in the oven for half an hour or forty minutes.

Melt the remaining oil and mix with a spoonful of boiled water. The oven temperature should be 180 degrees. Pour the turkey with melted butter and repeat this procedure every fifteen minutes. The total residence time of the turkey in the oven is 50-60 minutes.

To do this, the juice that leaked into the mold during the baking process must be mixed with chopped onions and heated over low heat, stirring occasionally. Then we pour everything into the pan, pour the broth into a thin stream, put the washed offal and cook for 20 minutes over low heat.

For the filling you will need: half a liter of chicken broth, 3 medium finely chopped onions, a slice of dried white bread, paprika (powder), sage, apples (2 medium), lemon. You can add dried fruits to taste.

Pour the broth into the pan, add the onion and simmer over low heat for 15 minutes. The onion should become soft. At this time, in another bowl, mix the bread, egg powder, herbs, paprika, salt, ground pepper and pour the onion broth. We mix everything and before baking we put it inside the carcass. Sew the turkey and set to bake for 50 minutes.

In order to spice up the dish, you can serve the turkey baked in the oven with cranberry sauce. To cook it, you will need: 3 cups of fresh cranberries, 1-2 cups of sugar, 50 grams of cognac.

The oven must be heated to 150 degrees. Meanwhile, mix cranberries and sugar and place in a baking dish. Stirring often, simmer the sauce for 60 minutes, then remove from the oven and pour in cognac. Serve in a sauceboat.

In order to make the dish juicy, it is recommended to cover the bird with foil in the first 40 minutes of cooking, then you need to remove it so that the crust becomes rosy.
