Fish with sweet and sour sauce has a rich taste and aroma. It is served with almost any side dishes. But best of all, it goes well with fresh vegetables. In today's article, several recipes for such dishes will be described.
Orange version
This incredible Asian-style treat features a multi-component rich flavoring bouquet. It must contain ingredients such as ginger and soy sauce. It is they who give the finished dish a special piquancy. To make fish in sweet and sour sauce, stock up on all the necessary products in advance. In this case, you will need:
- 500-700 grams of silver carp fillet.
- 30 milliliters of cherry plum jam.
- A couple teaspoons of sugar.
- 30 milliliters of soy sauce.
- A tablespoon of flour.
- Medium Orange
- A tablespoon of apple cider vinegar.
- Large onion.
- 150 milliliters of water or broth.
- A pair of cloves of garlic.
- 2 tablespoons of potato starch.
In order for the fish you cooked in sweet and sour sauce to acquire a bright taste and aroma, additionally stock up on ginger root, hot peppers and refined vegetable oil.
Process description
Washed and dried silver carp are cut into approximately equal stripes, the thickness of which is about three centimeters. Then the fish is salted, sprinkled with ground pepper, sprinkled with apple cider vinegar and cleaned to the side. Ten minutes later, the marinated fillet is breaded in wheat flour and sautéed in warmed lean oil until golden brown.
Put onion, chopped garlic and chopped ginger into a separate frying pan. After three minutes, add cherry plum jam and juice squeezed from one orange to the browned vegetables. All this is poured with water or broth, seasoned with spices and boiled over low heat. Just a few minutes later, a starch solution is added to the resulting sauce and the silver carp is laid out in it. All this is brought to a boil and removed from the burner. Ready fish with sweet and sour sauce is insisted under a lid and only then served on the table. Loose rice is usually used as a side dish.
Option with tomatoes
To prepare this dish, you can use almost any white fish. But tilapia, halibut or cod are best suited for these purposes. Vegetables can also be varied taking into account their own taste preferences. The basic recipe for fish in sweet and sour sauce suggests a certain set of components. Therefore, make sure in advance that you find:
- Kilo fish fillet.
- 3 multi-colored bell peppers.
- Large ripe tomato.
- Onion.
To make the sauce you will need:
- ¼ teaspoon of rock salt, wine vinegar and ketchup.
- ¼ cup sugar, orange and pineapple juice.
- A couple of tablespoons of corn starch.
- 1 tsp sesame oil.
In addition, for cooking fish in sweet and sour sauce, you will need batter. It consists of:
- 4 teaspoons of baking powder.
- A pair of glasses of flour.
- 6 tablespoons of vegetable oil.
- ¼ cup cornstarch.
- A teaspoon of salt.
- A pair of glasses of water.
Sequencing
First of all, do batter. To create it in one bowl combine baking powder, salt, spices, butter and flour. All this is left for a couple of minutes, and then filled with water and stirred well. Pieces of washed and dried fish are dipped into the resulting dough.
The fillet processed in this way is sent to a hot pan, in which there is already refined vegetable oil, and fried on all sides until a brown crust appears. Then the fish is laid out on paper towels so that excess fat is stacked from it.
Cut the vegetables into the empty pan and fry them for three minutes. Now it's time to make the sauce. In a suitable dish, ketchup, orange juice, wine bite and sugar are combined. All this is salted and stewed over minimal heat. Ten minutes later, starch dissolved in pineapple juice and previously fried vegetables are sent there. The contents of the dishes are brought to the desired consistency and removed from the stove. Serve such fish in sweet and sour sauce and hot vegetables. As a side dish for this dish, crumbly long-grain rice is most often used.
