'Arancini' - delicious Italian rice balls

Italian chefs use a variety of ingredients to prepare their dishes, which is probably why their cuisine is so in demand around the world. It was formed over the centuries under the influence of the best cuisines of different countries; it incorporated interesting recipes of Milan, Liguria, Neapolitan, Sicilian and many other cuisines. National dishes of Italy are very hearty, spicy and aromatic, almost all recipes include the obligatory component - cheese, it gives any dish a refined taste and an appetizing look.

Traditionally, Italians always have meals with appetizers, for example, Arancini snacks (rice balls with risotto and young mozzarella cheese). Then they use salads seasoned with olive oil and salt, then the first dishes are served. Soups and broths are followed by a traditional pasta prepared in a specific way - not a single Italian table can do without it.

Dessert with cottage cheese, coffee or lemon cream completes the meal . Instead of a biscuit cake, ice cream of various varieties is often served. For dessert, it is customary to drink cappuccino - if it's a morning breakfast, espresso is served at noon, you can drink it all day. In general, Italian cuisine is very spicy and original. In almost all dishes, including simple Italian snacks are added: capsicum, onion, garlic, celery, cheeses, tomato puree, asparagus, herbs, various seasonings and spices, which whet your appetite.

In this article we will describe how to cook Arancini rice balls deliciously, as appetizers in Italy have a special role to play, as if they are starting a meal. There are a lot of varieties of snacks, all of them are good and easily digestible in their own way due to the abundance of greens and olive oil.

The proper preparation of appetizers is an important criterion for culinary excellence. This recipe is for 4 servings, we will need the following products:

- a glass of rice "Risotto";

- one hundred grams of wheat flour;

- three eggs;

- One hundred grams of diced mozzarella cheese;

- vegetable oil for deep fat at least 500 g .;

- dill;

- cilantro;

- parsley;

- two cloves of squeezed garlic;

- half a glass of crushed crackers;

- black pepper;

- salt.

Mix boiled rice with two raw eggs, garlic, chopped herbs. Moisten hands with cold water and form small balls from the resulting mixture. In each donut, make a recess and put cheese cubes there.

We take a deep fryer or a deep frying pan, pour vegetable oil into it (8 cm deep), heat it up. Pour flour into a plate, salt and pepper it. In another bowl, beat the egg. On the third plate, pour the crushed crackers.

Dip rice balls (each) in flour, then in a raw egg and in bread crumbs. Donuts are fried for two minutes until a golden crisp is formed, served with sour cream or with sauce. Indulge your family with this delicious dish!

Stuffed Arancini (Rice Balls)

For 10 pieces you need:

- ground beef 100 gr.;

- turkey breast 100 gr.;

- rice "Arborio" or "Vialone" 200 gr.;

- Parmesan cheese 50 gr.;

- tomato paste 10 gr.;

- green pea;

- two eggs;

- a glass of meat broth;

- a tablespoon of butter;

- celery, basil, parsley;

- onion;

- breadcrumbs 50 gr.;

- a tablespoon of olive oil;

- a pinch of chili, saffron, black pepper, salt;

- flour 10 gr.

1. For the filling: chop the onion, a portion of parsley, dill, cilantro, celery and ½ turkey breast.

2. Fry onion in olive and butter. To put minced meat, turkey, parsley and celery. Pepper, salt, put chili, tomato paste, broth, stuffing (see point No. 1) and green peas - all simmer for 15 minutes.

3. Boil the rice until half cooked, add the soaked saffron, grated cheese and butter there - mix, cool and stir in the egg.

4. Chop the basil and add the remaining herbs to the filling.

5. Beat one egg, pepper and salt. Divide the rice into 10 balls, put meat stuffing in the middle of each, close the recess and roll the stuffed balls in flour, egg and breadcrumbs.

7. Fry the donuts in oil until brown. Serve with herbs and fresh vegetables.
