Steam Omelet - Diet Food Recipes

Dishes made from milk and eggs are known in many national cuisines, but it is believed that the classic omelet is invented by French chefs. Omelet is a versatile dish. It is prepared for breakfast, dinner, it is included in the diet of medical nutrition, it is based on a protein diet, it is also recommended for baby food. It all depends on the cooking method. Eggs mixed with milk are fried in a thick pan, baked in the oven, steamed. And are not limited to just these two products. An omelet is prepared with mushrooms, ham, cheese, flour, potatoes and onions, green peas, various cereals.

Steam omelette has a special taste. It turns out to be very gentle and light and is recommended for children, for diet food. Not everyone on the farm has a double boiler, so you can do this: boil water in a large pan, put a colander in it (pan) so that it does not touch the water. Place the bowl with the egg-milk mixture in a colander, close and hold until the mixture thickens (usually 10-15 minutes). Such a steam bath perfectly replaces a double boiler.

A steam omelet, the recipe of which is called classic, is prepared simply, the main thing is to observe the correct proportion. But it is always the same: the correct omelet is obtained when the volume of eggs is equal to the volume of milk. It is not necessary to measure milliliters and grams, half the eggshell is a good measure. So, if you plan to make an omelet from one egg, then measure out two halves of the milk shell. It should be remembered that the eggs should be mixed with milk or beat before the preparation of the omelet.

So, for two servings of a classic steam omelet, we need five eggs, about one glass of milk, a little salt.

Do not beat the eggs, but mix gently, add milk with a weak stream, salt. We place heat-resistant dishes with this mixture in a double boiler for 15-20 minutes.

For people who do not tolerate lactose, milk can be replaced with water.

Steam omelet can also be prepared in a water bath. Pour water into a pan with a thick bottom and set the molds with the egg-milk mixture so that the water reaches only half of them. Close the pan. Boil water over low heat until the omelet is ready.

The protein omelet has special dietary properties. With indigestion, diseases of the stomach, high cholesterol, it is indispensable.

To prepare one serving, we need the proteins of three eggs, a quarter cup of water or skim milk, butter to lubricate the mold.

Carefully separate the yolks from the proteins. There is a special device for this, but you can do without it. With a whisk, beat the proteins with the selected liquid, pour the mixture into a mold, cook in a double boiler or in a steam bath for 10-15 minutes.

Chopped steam omelet with sauce is another recipe for making an egg dish. For it, we need 2 eggs, 80 milliliters of milk, a tablespoon of wheat flour, 15-20 grams of butter.

For a couple we cook omelet according to the classic omelet recipe. But to make the omelet denser, we slightly change the proportions: we reduce the amount of milk by half. The resulting dense mass is cooled and chopped. Mix the flour with the remaining cold milk so that there are no lumps. Cook the mixture in a small saucepan until jelly, then add the butter and chopped omelet. This dish will be even tastier if you add a little low-fat cottage cheese.

Steamed omelet can also be mixed. But, considering that it is considered, first of all, as a dietary dish, it is not necessary to add fatty and fried sausage, bacon, spicy cheese to it. Here, a small amount of melted butter, low-fat cottage cheese, mashed boiled carrots, mild chopped spicy greens are appropriate.
