Probably no one will argue that the most delicious cheesecakes are made from yeast dough prepared by your beloved grandmother. Families rich in tradition and respect for their ancestors have a proprietary recipe that is inherited along with family heirlooms and wise instructions.
According to one of these cheesecake recipes, you can cook this delicious pastry for your household. To prepare the dough, you will need the following ingredients:
- 50 grams of raw pressed yeast;
- 300 ml of milk;
- three eggs;
- 120 grams of sugar;
- 80 grams of butter;
- 4.5 cups flour.
Cooking dough
To prepare the dough for cheesecakes, it is necessary to warm the milk and dissolve in it half a serving of sugar and yeast, you can also add a pinch of salt. Leave the mass for ten minutes in order for the yeast to activate: a foam will appear on the surface of the milk, indicating that the process has begun. In a separate bowl, beat the eggs with the remaining sugar, add the melted butter and mix to a uniform consistency; vanilla may be added if desired for greater flavoring of the dough. When the dough is doubled, add the egg mixture to it, mix and pour the flour in small portions, kneading the dough.

It is possible that part of the flour will remain, since the level of gluten can be different - you do not need to try to use all the flour if the dough has already formed in a soft lump. How to cook?
The dough for cheesecakes is prepared as simple as possible: the cottage cheese with sugar and eggs is slightly beaten with a blender, flavor is added, melted butter and soda. Next, sift the flour and mix it into the base in small portions, achieving a soft plastic dough that will stick a little to your hands or table. Let the dough lie down for twenty minutes, in the meantime, you can prepare the filling: mix all the necessary ingredients together. If desired, you can add a hundred grams of raisins or dried apricots steamed in boiling water, cut into small pieces.
