Dolma is a traditional dish of oriental cuisine, which is very popular among the inhabitants of the European continent. Its main component is grape leaves filled with twisted meat or vegetables. - 500 g minced lamb;
- 120 g of dry rice;
- 100 g of onions;
- 2 cloves of garlic;
- salt, aromatic spices, water, herbs and vegetable oil.
Ground mutton is combined with boiled rice. Chopped herbs, sautéed onions and crushed garlic are added there. Everything is thoroughly mixed until smooth, and then laid out on pre-soaked grape leaves and wrapped in an envelope. The resulting product is placed in a pan, poured with water and boiled for about an hour and a half.
With vegetables
This recipe will surely interest those who follow a diet. The calorie content of dolma stuffed with vegetables is only 108 kcal per 100 g. To prepare it, you will need:
- 30 salty grape leaves.
- A can of chopped tomatoes in its own juice.
- Small onion.
- Shallow carrot.
- 2 stem celery.
- ½ cup brown rice.
- Zucchini.
- Sweet pepper (preferably yellow or red).
- 2 cloves of garlic.
- 1 tsp natural lemon juice.
- 1 tsp zirs.
- Salt, herbs, pepper and vegetable oil.
Boiled rice is combined with sautéed vegetables and fried celery stalk. All this is complemented by chopped herbs, salt, lemon juice and spices. The resulting mincemeat is filled with grape leaves soaked in boiling water and folded with envelopes. The resulting products are laid out in a mold and poured with tomatoes, combined with the remaining celery and garlic, and then sent to the oven. Bake the dish at 180 ° C for about 35 minutes.
With nuts
Using the technology discussed below, a very aromatic and nutritious dolma is obtained. Calorie content per 100 g of such a dish is about 460 kcal. Therefore, it can not be called dietary. To feed your family a hearty oriental dinner you will need:
- 60 grape leaves.
- 1 kg of twisted beef.
- 1 liter of broth.
- 1.5 cups of rice.
- 2 onions.
- 2 tbsp. l pine nuts.
- 2 tbsp. l tomato paste.
- 1 tsp caraway seeds.
- 1 tbsp. l ground cinnamon.
- Salt, olive oil, dried herbs and water.
Minced meat is fried until tender, not forgetting to add chopped onions and spices to it. Shortly before turning off the fire, washed rice, tomato paste, dried herbs, caraway seeds and nuts are sent to a common pan. Soaked grape leaves are stuffed with the resulting mass and folded with envelopes. The resulting workpieces are put in a pan, poured with broth and simmer until soft.
