Winter is the time when it is difficult to find fresh vegetables of good quality to make a delicious salad out of them, which is suitable for porridges, potatoes, and meat. During this period, most of the vegetables are sluggish, while the amount of pesticides in them goes off scale.

Salad "Three"

The products needed for the salad are not difficult to purchase. You will need:

The process of preparing the Troika salad will take about one hour.

On the eve of the day of preparation of the Troika salad or earlier, at your convenience, you need to thoroughly wash the cans with baking soda and then sterilize them. With the covers do the same procedure. By the time they are full, the jars should be clean and dry.

  • Combine oil, salt, vinegar and sugar and lay the vegetables on top in a saucepan. The first to put tomatoes on the bottom. Then evenly spread a layer of eggplant, on top of which place the zucchini. And the last to put the bell peppers in the pan.
  • Place the pot with vegetables laid in it on the stove for minimal heat. Cover and wait for boiling. And from that moment, stew them for forty minutes.
  • To prevent vegetables from burning to the bottom of the pan, they sometimes need to be gently mixed.
  • Once the vegetables for the Troika salad are ready, remove the container from the stove and immediately place them in a jar and roll them up.
  • So that when filling the cans with salad, it does not crack, it must be held over the steam. Be sure to wrap the jar with a blanket and leave it to cool for twelve hours.

"Three": a spicy salad for the winter

This salad will be slightly different from the previous one. Ingredients Composition:

  • Carrots - 3 pieces.
  • Allspice - 6 peas.

How to cook a salad

To prepare the Troika winter salad, all vegetables will need a little preliminary preparation:

  1. You need to take sweet bell pepper, you can color, wash it and cut into two halves in length. At each part, then remove the insides and cut them into thin long strips.
  2. Wash eggplant, like all vegetables, and cut into circles, about one centimeter thick. Fold them in any suitable container and lightly salt. Stir the eggplant with salt and set aside for twenty minutes.
  3. Peel the carrots, then wash it very well and chop with a thin straw.
  4. Rinse the tomatoes, rinse with boiling water, peel off the films and cut into fairly large pieces.
  5. Separate onions from the husk, rinse it under running water and chop coarsely.
  6. Peel and push the garlic cloves through the garlic. Finally, drain the resulting juice from the eggplant.
  7. Now you need to take the cauldron, pour oil into it and put on fire.
  8. Once the oil is hot, put the onion in it and fry for about seven minutes.
  9. Add all other vegetables to the onion and reduce the heat after boiling.
  10. Pour in salt and sugar, as well as peas of allspice and simmer them for forty minutes.
  11. Stew the vegetables during stewing. After thirty minutes, add the garlic and chopped chilli to the cauldron. Stir and stew vegetables to the end.
  12. At the end of the recipe, put the Troika salad in previously prepared cans, put the lids on top and sterilize for another thirty minutes. Then roll up the cans with lids and be sure to turn them upside down.
  13. Cover with something tight and do not touch the workpieces until they cool completely. From the amount of vegetables needed for this recipe, you get three half-liter cans of salad for the winter.
