When in the summer at your own summer cottage there is a huge amount of ripe tomatoes and crisp cucumbers, you want to preserve the “aroma of summer" for cold and uncomfortable winter evenings. We offer you today to prepare a surprisingly delicious salad in layers of vegetables for the winter. The recipe is simple, quick and allows you to preserve the aroma, texture and rich color of vegetables.
Ingredients
In order to prepare a preparation - a salad in layers for the winter you will need: cucumbers - 150-200 grams, small tomatoes (you can take cherry) - 100 grams, sweet bell pepper - 150 grams, onions - 80-90 grams.
As for spices, for salad you will need coarse salt - one tablespoon, allspice - three to four peas, one dessert spoon of granulated sugar, 4 tablespoons of 9 percent vinegar. And, of course, water –0.5 liters.
Vegetable preparation
Rinse the tomatoes and cut into several slices. If you take small cherry tomatoes, then they can be cut into two parts. Cucumbers and peppers also wash well. Cucumbers are recommended to cut into circles, and pepper - in small slices or straws. Onions are cut in half rings. Since you make a tomato salad in layers for the winter, the vegetables need to be cut not very large. They should fit in a jar in several layers. It will be both beautiful and tasty afterwards.
Can preparation
Before putting vegetables in a jar, they should be properly processed and prepared. As for washing cans, experienced housewives advise using baking soda for this purpose. It is completely safe for health and perfectly launders cans. Next, the jars will need to be sterilized. Most often, an old kettle is used for this. Stir until completely dissolved. Then you can add a few peas of allspice, one bay leaf. At the final stage, vinegar is added. Remember that before adding vinegar, the fire should be reduced to a minimum and pour vinegar slowly in a small stream. Otherwise, it will go foam and have to cook the marinade again.
Ready marinade is poured into jars of vegetables. Any vegetable salad in layers for the winter is subject to sterilization. To do this, you need to put a jar with an untwisted lid in a deep pot with water. Water boils, measure time 10-15 minutes. After that, you can get sterilized banks and roll up.
Useful Tips
Try to use only clean water. It can be well water or purified using a filter. As a rule, tap water contains a lot of impurities that do not have a positive effect on the storage of workpieces. If you use "bad" water, it is likely that the banks will "explode" after a few days of storage.
