More and more people today are passionate about the topic of healthy eating, raw food diet, vegetarianism and other similar areas. A great vegetable crop that can benefit the body is broccoli. In addition, from it you can make delicious soups for every day.
Broccoli soup. The recipe is simple.
This recipe for broccoli soup is very simple, you only need:
- 400 grams of broccoli;
- 1 carrot;
- 2 to 3 medium tomatoes;
- 2 small onions;
- a tablespoon of butter;
- meat broth (it is best to take chicken for cooking, and not some other, for example, beef);
- 2 - 3 also medium potatoes;
- parsley and dill to taste, as anyone loves.
Onions are carefully cut into half rings, laid out in a pan greased with a small amount of sunflower oil, and fried until golden. Broccoli is divided into inflorescences and laid out in boiling chicken stock. Then there are fried onions and diced potatoes and carrots. Everything is cooked until cooked, but 5 minutes before completion, put peeled and chopped tomatoes. As you can see, there are a lot of vegetables in the composition, and therefore this soup even has another name - broccoli vegetable soup.
Appetizing looks if this soup is served with sour cream. And vegetarians can use in cooking not meat, but vegetable broth, it will also turn out well.
Broccoli cream soup. Complicated recipe
Products: 10 grams of walnut oil, 30 grams of almonds, 20 grams of sesame seeds, 450 grams of broccoli, 1 teaspoon of iodized salt, suneli hops, red and black peppers (you can also use nutmeg, thyme and zira).
Head of broccoli cabbage should be thoroughly washed and then divided into inflorescences. In a pan, bring the water to a boil and lower the already prepared inflorescences into it, while the stem can also be put there. Water should be taken so that it completely covers the cabbage. Then the broccoli is cooked until cooked (it takes about 5-7 minutes). Spices and salt are added.
Now it's time to move on to the almonds. It is poured with boiling water and soaks for a while. Then the nuts are peeled and chopped in a blender. Then boiled cabbage inflorescences are placed in the same blender bowl. Gradually pouring the remaining broth, bring everything to the necessary consistency (everyone chooses for himself, this is a matter of taste). Everything, the dish is ready, and it remains only to arrange on plates. But here is not so simple. In each plate, add a teaspoon of vegetable oil and a little bit of walnut oil. Sprinkle with sesame seeds and chopped almonds on top. The output is a delicious and healthy broccoli soup. The recipe , of course, is complicated, but the result is worth it.
Broccoli soup. Cream Recipe
Ingredients: meat broth, carrots, 2 heads of broccoli, 2 potatoes, a tablespoon of butter, a tablespoon of flour, a half cup of cream, salt and spices.
Prepare the broth (it will be tastier if you make beef, but it doesnโt matter), and then remove the meat from it - you donโt need to cook this dish anymore. All the favorite seasonings are put in the broth. Then wash and peel the vegetables: potatoes, carrots and cabbage. They are cut into small pieces and put in a pan. Then they are poured with broth so that it slightly covers them. And put everything on medium heat to cook until tender. After the vegetables are cooked in a broth, they need to be mashed to a uniform consistency, and you can even do it in a blender. The resulting vegetable puree is again added to the broth and allowed to boil.
While the mashed potatoes with the broth are brought to a boil, the sauce is prepared: the butter is put in the pan, the flour is fried and the cream is poured (that is, the result is a broccoli soup with cream). Everything is brought to a thickening and poured into boiling soup. You can also put in a soup spoon of cream cheese, it will be tastier. Then only then it is necessary to intensively stir for two minutes, so that the cheese is stirred, and not sank to the bottom and does not burn to it. So our broccoli soup is ready!
