It is generally accepted to consider steamed fruits filled with various fillings and a sweet dessert. Most often, this method of heat treatment is typical for fruits that are dense in texture and saturated in taste - apples, pears and quinces. They look wonderful with whipped cream, custard and grated chocolate. Is it possible to serve the proposed fruit as an unusual second course? How is prepared, for example, such a baked quince? The recipes presented in this article are striking in their originality due to the unusual combination of the sweet taste of the fruit and the piquantly salty “shade” of fillings filling fruit baskets.
Oven baked with minced meat: used products
5-6 pcs. medium-sized quince fruits will require the following components.
For filling with meat filling :
- 500 g lean meat from chicken (2 parts) and beef (1 part);
- 1 medium-sized onion;
- 1 small clove of fresh garlic;
- greens of fresh parsley;
- to taste pepper and salt.
For the sauce :
- 4 full Art. l light sour cream;
- 4 full dessert L. fat cream;
- 1 tablespoon of any broth (meat or vegetable);
- 1 tbsp. l any odorless vegetable oil;
- seasoning mixture (pepper, paprika, coriander, oregano, basil).
- 5 sprigs of green fresh dill;
For ruddy top crust :
- 150 g of dense non-soft cheese.
Baked quince in the oven with minced meat: cooking

- Grind the meat with onions and garlic. Finely chop the greens and add to the minced meat. Season the mass with spices and salt to taste. Stuff the minced meat thoroughly, beating off a little, like on cutlets.
- Wash the quince by removing the upper whitish coating, and then scrape the inner flesh with a knife or a pointed spoon, forming a “basket” with walls 1-1.5 cm thick.
- Tightly fill the fruit “containers” with minced meat. Place them on a greased baking sheet and then in a preheated baking oven at 200 ° C. After 20-25 minutes, the mince should lightly brown on top.
- Mix all the ingredients of the sauce. Baked quince will be much juicier after you pour the prepared mixture of baskets. 1-2 tbsp. l leave the sauce for the cheese mass. Continue baking for another 15-20 minutes, slightly lowering the temperature.
- Grate the cheese coarsely and mix with finely chopped dill, add the rest of the sauce for viscosity. Put the resulting mixture on quince and brown for another 5-7 minutes.
- Serve the dish with vegetable salad, garnishing with sprigs of greens. Mustard or spicy tomato ketchup will be a great addition.
Oven baked quince with rice filling
Additional ingredients are used to add a piquant flavor to this traditional white granular filler. After all, it is usually made sweet, flavored with honey, raisins and vanilla. Quince baked in the oven turns out to be slightly different in taste, if you put a little ground nuts mixed with finely chopped chicken fillet inside the rice. And the cheese crust successfully “shades” and softens the salinity of the filling. Experiment by combining the incompatible and getting new amazing tastes!
