Turku is heated on hot sand or fire for 20 seconds. Sugar is poured into the dishes taken from the fire (to your taste). Turk is again sent to the fire until the sugar in it begins to caramelize. You need to carefully monitor the sugar, because it can burn out at any time. As soon as the sugar has turned brown, water is poured into the container, after which it is periodically stirred and brought to a boil. At this point, 1-2 tablespoons of finely ground coffee are poured into the water. The drink is constantly stirring, and so that the coffee does not boil too quickly, a tablespoon of ice water is added to it. After adding water, the drink should not be disturbed. When the foam begins to rise quickly, the drink is removed from the fire. Once again add a spoonful of cold water to boiling coffee and again put the Turk on fire.
This procedure can be repeated up to 4 times. As a result of this procedure, a very strong and aromatic coffee is obtained.

Ground coffee is added finely ground coffee. Turku put on a small fire and watch the process. With the formation of foam, dishes are removed from the fire. After the foam has settled, the drink is again sent to the fire. A similar procedure is performed up to 4 times. After the last foam formation, the coffee is mixed and poured into cups.
