Eggplant roll - it's delicious!

Now, in a period of abundance of fresh vegetables and fruits, we all strive to stock up on vitamins for the winter. Do you know which of the fruits in the East is called the “longevity vegetable”? This is eggplant. It contains a large amount of vitamin B, as well as salts of potassium, phosphorus, iron and carotene. Therefore , eggplant dishes are recommended for use in cardiovascular diseases, liver and kidney diseases. And this vegetable is an excellent fat burner.

A variety of dishes are prepared from eggplant. It is fried, baked, boiled and even eaten raw. Everyone knows such a dish as “overseas caviar, eggplant”. But let's be original and prepare eggplant roll. The article describes three simple and very successful recipes. And the first (by the way, the simplest) will be eggplant roll with tomato. For him we need:

- mayonnaise - 1-2 tablespoons;

- tomato - 2 pieces of medium size;

- table salt;

- vegetable oil for frying;

- garlic - 1 clove.

Cut the eggplant lengthwise into long thin “tongues”. Put in a plate and add. Let stand for 10-15 minutes, and then rinse with cold water. This is necessary to get rid of the extra bitterness that eggplant contains. Drain the washed slices with a napkin and fry until a sure golden hue on both sides in vegetable oil. We lay the fried pieces on napkins so that the glass has excess oil (the eggplants absorb it well). We begin to collect eggplant roll. To do this, squeeze a clove of garlic into mayonnaise and mix. Lubricate each slice with the resulting sauce. Cut the tomatoes into circles. Put a tomato on each slice and roll it tightly into a roll. For structural strength, you can chop it with a toothpick. Finished products are kept in the refrigerator for an hour.

The second option will be eggplant rolls with cottage cheese and walnuts. To prepare this dish, fry the eggplant as in the first case. In addition, we need:

- unsweetened cottage cheese - 60 grams;

- walnuts - a small handful;

- salt and pepper to taste;

- sour cream - 2 tablespoons;

- garlic - 1 clove.

In a blender, beat the cottage cheese, nuts, sour cream and garlic. Salt and pepper to taste. We smear slices of fried eggplant with this mixture and turn them into rolls. Everything is very simple and delicious.

And the third option for the recipe will be eggplant rolls in the oven. As in the first two cases, fry the eggplant. Next we take:

- tomato - 2 pieces;

- green onions - 1/4 bunch;

- grated cheese - 50 grams.

Preheat the oven to 180 degrees. Cut the tomatoes into circles and chop the green onions. We cover the baking sheet with baking paper and grease it with vegetable oil. For each slice of fried vegetables, put a slice of tomato, a pinch of green onion and sprinkle with grated cheese. We turn our eggplant roll and spread on a baking sheet. For beauty, you can tie each little thing with a feather of green onions. Bake for 10 minutes and serve.
