Zucchini flat cake
For 4 servings you will need:
- about 2 glasses of flour (almost 400 grams);
- crushed dry rosemary, salt;
- a bag (or teaspoon) of baking powder;
- 100 ml of plain water;
- one third of a glass (75 ml) of oil (sunflower / olive);
- large zucchini (or several small ones);
- onions - one head;
- cherry tomatoes (several pieces with a total weight of 150 grams);
- on a tablespoon of honey and balsamic vinegar.
Technology
How to bake tortillas from zucchini? The recipe, despite the large list of ingredients, is simple. To begin, pour flour into the bowl, add chopped rosemary, baking powder and salt. Shuffle. Make a small indentation in the center and pour in oil and water. Knead the dough. It must be divided into 3 parts and roll cakes. They must be thin. Heat the oil in a pan. Put onion, zucchini, cherry tomatoes, cut into half rings, add vinegar and rosemary. Cook for 12 minutes at medium heat with the lid closed. Grease the prepared cakes with butter and put the stewed vegetable mixture on them. Put the dough on a baking sheet, put in the oven for 10 minutes. The temperature is 200 degrees. Serve hot with sour cream.
Traditional zucchini tortilla
Structure:
- zucchini weighing 1 kg;
- wheat flour - 4 tbsp. spoons;
- a pair of fresh chicken eggs;
- a pinch of sugar, salt and a little oil for frying.
Cooking technology
Grate the zucchini (if it is not young, then remove the peel). Mix with flour, eggs, sugar, salt. Knead the dough properly. Heat the butter, spoon the mixture in a pan and fry the cakes until a soft golden color. Serve hot with sour cream-mayonnaise sauce.
Zucchini and cheese tortilla
This recipe includes:
- small zucchini (it is best to take young fruits);
- fresh chicken egg 1 piece;
- 3-4 tbsp. tablespoons of flour;
- a piece (70 grams) of any cheese;
- salt, oil.
Cooking technology
Peel the skin from the zucchini. Rub it on a coarse grater. Salt and mix to make juice stand out. Grate a slice of cheese. Preheat the oven to 180 degrees. Drain excess liquid from the zucchini, you can squeeze it a little with a spoon. Break the egg, add the indicated amount of flour and half of the grated amount of cheese. Mix everything. Put the mixture in the greased tins, sprinkle with the rest of the cheese. Put in the oven for half an hour. Cheese should be browned. The recipe is simple and well-suited for those who follow proper nutrition. After all, frying is not provided in it, which means there are no extra fats and calories. About 10 pieces of cakes are obtained from the indicated amount of ingredients. For serving, you can prepare a cream sauce with garlic and pickled cucumber (chop the garlic, finely chop the cucumber, mix with sour cream, salt to taste, you can add a little mayonnaise to the sauce).
