This is necessary in order to calculate the correct size of the mastic. Making cakes should begin with their preparation so that the mastic does not "run away" from them. Most often, for this, the cake is coated with butter cream and sent to the refrigerator to freeze the cream, and then polished, giving a perfectly flat surface using a dry hot knife. After that, the table is sprinkled with starch and mastic is rolled on it into a layer 0.5 cm thick, and of such a diameter that the cake is completely covered with it. Put the mastic on the culinary work and carefully level it with hands covered with starch. Excess mastic is cut with a knife at a distance of 2 cm from the cake, and the tail is wrapped under the cake. It remains only to decorate the masterpiece from above at will.
