Each of us, for sure, loves to eat deliciously. But sometimes you have to give up some dishes for one reason or another. For example, meat, fatty on fasting days or for health reasons.
Among the people of any country, there are believers who strictly relate to the canons, rules and commandments of their church. They strictly observe fasts, attend divine services, and lead a correct lifestyle in accordance with religious traditions. The fact that fasting is considered a special spiritual and physical test for them is not a secret for anyone, however, it cannot be said that their diet is poor and inferior. A person who has been observing fasts all his life has in his piggy bank a large number of recipes for preparing lean, but no less tasty and nutritious dishes. Among them are lean cutlets. You will probably think: of course, this is not tasty, because this is an imitation of cutlets, and not the cutlets themselves. But do not rush to draw conclusions. You haven’t tried them yet. In fact, this is a very tasty, interesting and easy to prepare dish. To prepare the first type of cutlets, we need: onions, cabbage, semolina, garlic, vegetable oil, herbs, a little flour, spices, table salt and bread crumbs.
We cut the cabbage into 4-5 parts and cook in salted water for 10 minutes. Then we express the water, cool and scroll in a meat grinder to obtain a homogeneous mass. On a fine grater we rub onions and garlic. Finely chop the well-washed greens. All this is added to the ground cabbage, salt, pepper and add the necessary spices to taste. Mix everything thoroughly. We add the semolina to the very last and mix again. Then on a tray or oilcloth we form neat cutlets. To make lean cutlets look appetizing and beautiful, roll them in breadcrumbs. It remains only to fry on a small fire until a crispy golden crust is formed, put on a beautiful dish, garnish with greens and ketchup or some other lean sauce.
Lean cutlets can also be made from carrots. This will take no more than half an hour. To do this, we will need products such as corn flour, oatmeal, carrots, olive oil, sugar, salt, vanillin and, if desired, sesame seeds. From this set of products you can even extract two healthy dishes: carrot juice and vegetable cutlets.
We drive the carrots through a juicer, add a little olive oil to the juice and the drink is ready. And mix carrot cake with cornmeal, oatmeal, vegetable oil. All this is salt and sugar. We mix and we make beautiful cutlets of medium size from the finished mass. Then they must be boiled in a double boiler for about 25-30 minutes. But if you do not have a double boiler in the kitchen, do not be discouraged: this can also be done in a pan.
When the lean carrot cutlets are ready, put them on a large dish and sprinkle with overcooked sesame seeds. It remains only to choose a suitable fill. Honey and jam will do.
