In your favorite pizzeria, more than a dozen standard toppings can be presented, from sausages to bell peppers. But there is one of them that looks just as good, if not better than everyone else, and it is usually not found in catering. This is a pizza topping with pickles.
Think of foods that already contain pickles as the main ingredients: hamburgers, hot dogs, and other sandwiches. It is hard to imagine these snacks without such a filler. Nevertheless, even the most ardent pickle lovers never think that this product can be put in pizza.
Many people add strong-tasting salty and pickled products to pizza, such as peppers, olives and sardines. Cucumbers in this regard look no worse. Juicy cheese, crisp, spicy sauce and pickles are a great combination.
Since most pizzerias, unfortunately, still do not offer this option, you will have to cook this dish yourself. Experts recommend taking whole cucumbers so that you can use a peeler or a sharp knife and cut the product as thin as possible. Then you will need to wet the pieces between two paper towels to remove as much excess moisture as possible. So, what can be the filling for pizza with pickles when cooking in home conditions?
Option with dill and garlic sauce
This is the easiest pizza option. To prepare it, you will need the basis of the dough and the following.
For the sauce:
- 1 head of garlic (finely chop 3/4 teeth + 1/4 chop with a mortar and pestle);
- half a glass of olive oil;
- 1 liter Art. dried dill;
- 1/2 l. including kosher salt;
- 1/2 l. including black ground pepper.
For filling:
- 4 large whole chilled cucumbers;
- 120 grams of mozzarella cheese, grated;
- 1 liter including dried dill.
How to do it?
Preheat the oven to 220 degrees with a rectangular baking stone on the middle rack.
Mix all the ingredients for the sauce in a jar and shake vigorously. Set aside.
Thinly chop pickles. Press the square dough ball into the clean kitchen counter with your hands. Roll with a rolling pin in half. Put a few drops of olive oil on the rolled surface and spread with your fingertips, then lay the dough on itself. Fold again and apply olive oil again. Fold again. Roll the dough very thinly until it reaches a size of 30x45 cm. Put it on a sheet of parchment paper and on a thin baking sheet. Then make the pizza topping with pickles.
Add the garlic sauce in a circular motion with a spoon until it covers the surface of the dough. Sprinkle evenly with mozzarella. Spread the pickles over the cheese and cover with an even layer of dill.
Bake for 15 minutes on a hot stone in the oven. Remove and let “rest” for five minutes before chopping and serving.
Sausage and minced meat option
This is a great pizza topping - with pickles, sausage and cheese. Adding ground beef makes it surprisingly satisfying. In addition, you can replace the sausage with bacon and thereby make a cheeseburger on a tortilla. In total you will need the following:
- 250 grams of ground beef;
- a third of a glass of diced red onion;
- 1 liter including Worcestershire sauce;
- 250 grams of smoked sausage or bacon;
- 400 grams of pickles;
- half a glass of ketchup;
- a quarter cup of mustard;
- 1 liter Art. mayonnaise;
- 1 liter Art. dill;
- 2 cups grated cheddar cheese;
- optionally sprigs of pickled dill.
How to make a hearty pizza with cucumbers?
Preheat the oven to 200 degrees in advance and sprinkle the pizza pan with a cooking oil spray.
In a large pan, sauté the beef and onions. Drain excess fat. Add Worcestershire sauce, pepper and salt to your taste. Set aside.
Next, the filling for pizza with pickles is prepared like this. Fry the sausage or bacon in a separate pan until cooked. Let cool and cut.
Roll the pizza dough into the base and bake for 8 minutes. While the base is baking, prepare the sauce. In a small bowl, add ketchup, mustard, mayonnaise and seasoning.
Remove the base from the oven and evenly distribute the sauce. Sprinkle with half the cheese and then the fried minced meat. Lay on top of the sausage and remaining cheese. Bake for 6-10 minutes or until the cheese melts and the crust turns golden brown. You can complement the pizza toppings with pickles and sausage pickled dill. Slice and serve.
Option with tomatoes and aioli sauce
This pizza topping with pickles, sausage and tomatoes is very hearty and delicious. All this is provided by a large number of ingredients in the composition. In total you will need the following:
- 500 grams bought in a store or home-made pizza dough;
- 250 grams of minced beef;
- 2 l including Worcestershire sauce;
- 2 slices of smoked sausage, finely chopped;
- half a glass of ketchup;
- 2 l Art. tomato paste;
- half a glass of chopped onion;
- a glass of chopped cheddar;
- a glass of grated mozzarella;
- half a glass of chopped romaine lettuce;
- half a glass of chopped cherry tomatoes;
- half a glass of chopped thinly pickled cucumbers.
For aioli:
- 1 liter Art. fresh dill, finely chopped;
- 1 liter Art. pickled dill juice;
- a quarter cup of mayonnaise.
Cooking hearty pizza
Fry the minced meat in a large pan. Mix it with finely chopped sausage. Add Worcestershire sauce, pepper and salt to taste. Roll out the pizza dough to fit the size of the special baking stone. Remove it from the preheated oven and carefully transfer the dough to a stone.
To make the sauce, mix ketchup and tomato paste in a small bowl and mix. Spread the sauce evenly over the pizza dough and sprinkle with a mixture of minced meat and sausage. Top with chopped onions, then with both cheeses. Bake for 10-15 minutes, or until the cheese melts and the crust turns golden brown.
To make aioli, beat the mayonnaise with chopped dill and marinade. Put in a bag with a small hole in the corner to pour the finished pizza. Remove the item from the oven and season it with pickles, tomatoes and lettuce. Sprinkle with the desired amount of aioli. Slice and serve.
Pickled Mushroom Option
Such a filling for pizza - with pickles and mushrooms - turns out to be quite piquant. To prepare this dish you will need:
- ready-made pizza dough;
- corn flour for sprinkling;
- 1 liter Art. olive oil;
- a glass of grated Gruyere cheese;
- a glass of small pickled mushrooms, dried;
- a glass of pickles, chopped;
- 1 to 4 teaspoons of crushed red pepper flakes.
Cooking spicy pizza
Preheat the oven to 220 ° C in advance. Roll out the dough on a lightly floured clean surface into an oval measuring 20x35 centimeters, about 5 mm thick.
Transfer the tortilla to a baking sheet or pizza stone sprinkled with cornmeal. After that, put pickles on the pizza toppings. Lubricate the surface with oil and sprinkle with cheese. Top with pickled mushrooms, pickles and lightly sprinkle with pepper flakes. Place the product in the oven and bake for 8–10 minutes or until the cheese is bubbly, melted and browned. Remove from the oven, cut into slices and serve.
Cuban pizza
This is a very original recipe, suggesting using a filling for pizza with pickles with an unusual combination of flavors. All you need is the following:
- ready-made pizza dough;
- 1 liter Art. thick cream;
- 1/4 cup yellow mustard;
- 180 grams of chopped ham;
- half a glass of pickles, thin slices;
- half a glass of diced fried red bell pepper;
- half a glass of finely chopped yellow onions;
- a glass of grated Swiss cheese;
- 2 cups grated mozzarella cheese;
- freshly ground pepper.
How to make Cuban pizza?
Preheat the oven to 220 degrees with a pizza stone. In the meantime, mix the mustard and cream in a small bowl. Prepare the rest of the ingredients for easy pizza assembly.
Roll out the dough. Remove the pizza stone from the oven and place the dough on it. Spread mustard sauce over it. Cover with half a glass of Swiss cheese and a glass of mozzarella. Spread ham, pickles, fried peppers and onions on top. Upstairs, place the remaining half a glass of Swiss cheese and a glass of mozzarella. Bake at 220 degrees for 13-15 minutes, until the cheese is melted and browned.
