Required ingredients for the dish:
- semolina - ½ cup;
- small pumpkin - 1 pc.;
- fresh milk - 1 full glass;
- medium-sized chicken egg - 2 pcs.;
- black pepper and sea salt - add to taste;
- low-fat veal - 200 g;
- bulb onion - 1 pc.;
- granulated sugar - 2 large spoons;
- Odorless vegetable oil - for frying;
- breadcrumbs - 100 g.
The process of preparing the main vegetable
To make the pumpkin cutlet juicy and tender, you should carefully process the main component. To do this, you need to take a small fresh vegetable, peel it of seeds and a hard peel, and then grate it on a fine grater. Next, the crushed pumpkin must be placed in a saucepan and fry a little in vegetable oil (for 10-13 minutes). After this, add sugar, sea salt, semolina to the vegetable and pour in fresh milk. In this composition, the ingredients must be kept on a gas stove until completely thickened, and then removed from the heat and cool well.
The process of preparing the filling
Pumpkin cutlet is much tastier if you use the meat product additionally during the preparation of such a product. We decided to take a small piece of low-fat veal, and then chop it in a meat grinder, fry in sunflower oil along with onions, seasoning with salt and pepper. After this, mince is required to cool in cold air.
Dish formation
Cutlets with meat and pumpkin are formed very easily. To do this, break 2 chicken eggs into a mass of vegetable and semolina, and then mix them thoroughly until smooth. Next, you need to take 1.5 tablespoons of pumpkin mixture and form a thick small cake from them, in the center of which should be placed 2-3 dessert spoons of fried minced meat. After this, the base must be carefully closed so that in the end you will have a cutlet with meat filling. By analogy, all other semi-finished products are made.
Heat treatment
Before frying such products in a pan, they should be well baked in breadcrumbs. Pumpkin cutlet is cooked in vegetable oil in exactly the same way as a similar dish of minced meat. On each side, such stuffed vegetables should be fried for no longer than 5-8 minutes. This time is enough to cover the dish with a fragrant and golden crust.

Pumpkin cutlets stuffed with minced meat, it is advisable to present to the dining table only in a hot condition. Such an original dish can be served with any hearty side dish, but it is better to use only fresh herbs or raw vegetables (tomatoes, lettuce, cucumbers, parsley, dill, etc.).
