And then the waiter asked: “And dessert?” . The choice was small, but a friend immediately aspirated said: “Tiramisu cake!” Here the dishes arrived, one by one. It was delicious, I can’t complain, but I remember only the dessert. Gorgeous, tender, unforgettable, delicious! Since then, if I see cakes or Tiramisu cake on the menu, I’ll definitely try it. For me, the quality of Tiramisu has become an indicator of the quality of a cafe.

But what kind of cake is this? What is his story? And what is this process - making Tiramisu?

The name of this dessert translates as “Ascend Me.” Let's start with the story. There are many legends around this dish. One of them is that this cake was first invented in Siena for the Duke of Tuscany by Cosimo III Medici, but called it "Zuppa del Duca" - "Duke's Soup". The name “Tiramisu” appeared later. In this case, the famous Giacomo Giovanni Casanova could also try such a dessert.

Another version is much more prosaic and brings the invention of this sweet pleasure closer to our time. According to Wikipedia, the first Tiramisu cake was made by a pastry chef from the Alla Bikirere restaurant in Treviso (the data on the name of the inventor of this masterpiece vary). But whether a great lover tasted this cake of love, is not so important. It is important that if you try this culinary temptation once, you will seek it again and again. Output? Make it yourself.

How to make Tiramisu cake?

The classic recipe includes Mascarpone cheese, espresso, eggs, sugar and savoyards - biscuit cookies in the shape of ladies' fingers with sugar grains (known since the 15th century, Savoy's official cookies). On top of the dessert is cocoa powder.

It is clear that not all components are easily accessible in our stores. Then we pose the question in a different way: how to cook Tiramisu cake at home?

So, we need a pound of cream cheese "Mascarpone" or very fat sour cream, four tablespoons of powdered sugar, four eggs, a package of fragrant biscuit cookies about 250 grams, an average coffee cup of espresso coffee (100 ml), a glass of strong dessert wine like "Marsala "(can be replaced with liquor or cognac diluted with water) and 2-3 tablespoons of cocoa powder.

We start cooking Tiramisu.

Separate the yolks, beat them with icing sugar and introduce them into the Mascarpone.

Beat the whites in a strong foam with a pinch of salt and also introduce into the curd and egg cream.

The wine is mixed with coffee.
