The first step is to peel the eggplant and cut it into circles of medium thickness (about 5 millimeters). Then sprinkle them with salt and leave for a while. Meanwhile, you need to cook batter. To do this, rub two-thirds of the cheese on a grater. Beat the egg, add milk, cheese, flour, pepper and garlic squeezed through the press into it. All components are mixed well so that there are no lumps. Next, dip each piece of eggplant in batter and spread on a heated frying pan. Pre-pour vegetable oil into it. It is necessary to fry the circles on each side. Eggplant in batter is almost ready. The final touch will be the grated cheese with which we sprinkle the fried pieces of eggplant. Serve this dish with sour cream-garlic or any other sauce.
