A custard cake is a favorite childhood taste. There is hardly a person who does not agree with this statement. There are many varieties of creams for toppings. They can be cooked at home. Consider the recipes of custard tubes - puff and waffle. Well, special attention will be paid to protein filling.
Sweet filler
Protein custard tubes are a favorite treat from childhood. It is easy to cook at home. It’s not necessary to be a talented cook.
For the preparation of custard for tubes, you will need these products:
- crude protein - 3 pcs.;
- vanillin - 0.5 sachets;
- water - 100 ml;
- citric acid - 1 tsp;
- sugar - 300 g.
First of all, you need to make a syrup. Add sugar to the water and set to cook on the stove. Keep on fire until the liquid is strong. If there is foam, it must always be removed. It is important not to digest the syrup, therefore it is recommended to cook no more than 8 minutes. Cooking time also depends on the dishes used.
Beat the protein thoroughly with a blender. It is important to boil the syrup and beat the protein almost parallel so that the latter does not donkey. Next, pour the sugar syrup into the protein. It is necessary to continue whipping it. At first, the protein will slightly decrease in volume, but after a while it will become lush, thick and will perfectly retain the given shape.
After we add lemon juice and vanillin to the resulting mass. Do not stop whipping. Protein custard for the tubes is ready.
Chocolate Filler
To prepare such a cream, we need the following ingredients:
- milk - 0.5 l;
- flour - 4 tsp;
- chocolate - 100 g;
- eggs - 2-3 pcs.;
- sugar - 190 g (or optional).
We break 2 eggs in a separate container, add 1/3 of the prepared milk and flour. Stir until smooth until lumps evaporate. At this stage, it is not necessary to beat the mass.
Pour the remaining milk into the pan. Pour sugar and chocolate there. In the process of boiling, it will melt. We bring everything to the formation of bubbles. Add the resulting mixture to the mass with flour. Mix thoroughly and put again in the pan.
Cook over low heat until slightly boiled. It is important not to stop constantly stirring. The finished cream can be mixed again so that it is homogeneous. Cool, add butter and beat in a blender. The result is a delicious chocolate custard for tubules.
Caramel Filler
We will need the following products:
- milk - 200 ml;
- cream 35% fat - 200 ml;
- flour - 4 tsp;
- boiled condensed milk - 180 g;
- sugar - 3 tsp.
Cooking process:
- Pour milk into the container. Add sugar and flour. Mix thoroughly with a whisk. It is important that there are no lumps.
- Pour into a saucepan, cook over low heat, without ceasing to stir. The mass should thicken.
- Remove from heat. Add boiled condensed milk. Mix and let cool.
- In a separate container, whip the cream. It should get air mass.
- For 1 spoon, add caramel cream to whipped cream, continuing to whip. Caramel custard for the tubes is ready!
Egg-free filler
To prepare a steamer cream without eggs, you will need the following ingredients:
- milk - 600 ml;
- butter - 190 g;
- sugar - 4 tsp;
- sifted flour - 6 tbsp. l .;
- vanillin - 2 g.
Mix milk with sugar. Leave some of the milk. Add flour to it. Boil milk with sugar, and beat with flour. As soon as the first mass boils, add the second to it. Cook until thick, stirring. When the mass is well enough, add the vanillin and remove the saucepan from the heat. Let cool, and then mix it with whipped butter.
Filler with cottage cheese
To make custard, prepare the following ingredients:
- cottage cheese - 195 g;
- milk - 0.5 l;
- butter - 210 g;
- sugar - 160 g;
- vanilla sugar;
- flour - 9 tsp.
Mix milk with pre-sifted flour. Cook over low heat until a firm consistency is obtained. After let cool in the refrigerator. Mix the butter with sugar, leave for a while to soften. Beat with a mixer. Slowly, combine whipped butter with milk, add vanilla sugar and cottage cheese. Mix everything thoroughly. The cream is ready! You can start cooking puff tubes.
Cooking a cake
By choosing one or even several recipes and preparing a cream, you can proceed to the manufacture of tubes. The task is not easy. To make it easier to understand the process, we divide it into step-by-step actions.

- We break the eggs. Separate the yolks from the proteins. Spread the yolks in a separate container. Add lemon juice and 200 ml of water. If desired, salt can be added.
- With a spatula, knead the dough to a stretching uniform consistency. If flour “absorbs” a lot of water, add water. If the dough turns out liquid, on the contrary, add flour. It needs to be kneaded for about 10 minutes. The mass should be well separated from the hands. Then put on a lavishly floured surface. Cover with a bowl and leave for 30 minutes. The dough should become more elastic.
- Knead the butter in a separate bowl. Add flour and mix thoroughly. The oil in the composition will help layering the dough. From it you need to form a flat rectangular cake.
- Cut the dough with a knife in the form of a cross, add a little flour and roll out with a rolling pin so that the middle of the layer is thicker than the edges. In the center of the dough, lay out the prepared cake of butter mixed with flour. We cover it with the long edges of the layer and pinch the edges.
- The resulting "envelope" is again put on the table, sprinkled with flour, using a thick rolling pin, starting from the middle, we roll out the dough layer in the shape of a rectangle 10 mm thick. Then with a soft brush we remove the excess flour and fold the envelope four times. Then a roll is formed with 4 layers of oil. We cover the dough with a napkin and give it 10 minutes, then again sprinkle flour on top and bottom. We roll it again to a thickness of 10 mm. And so on, until 256 layers are formed.
- Roll out the dough into a flat layer having a thickness of 5 mm, divide it into strips. We hold a conical paper tube, attach the end of the dough to the narrow end of the tube. Turning the tube, we impose on it a test strip spirally. It is important that the edge of the test of the previous layer is on the other. All you need to do 6 curls.
- We spread the tubes with the dough on a cold baking sheet. Lubricate with an egg. Turn on the oven at 240 degrees and bake for 15 minutes. Removing the tubes from the oven, remove the paper.
- And now what they have been waiting for so long. Using a pastry bag, fill the tubes with prepared custard. You can use two different fillers and squeeze them in turn. Add sugar powder for taste. Dessert is ready!

Cooking wafer rolls
To make wafer rolls, we need:
- egg - 4 pcs.;
- flour - 1 tbsp .;
- sugar - 1 tbsp .;
- butter - 200 g;
- vanillin.
Beat butter. Add the egg and sugar. Whip again. After pouring flour. The resulting dough should be thick. Grease the waffle iron with oil. Warm up, spread the dough. Turn on the waffle iron and wait for readiness.
