Cooking cottage cheese puffs

Often, ready-made dough is taken for this dish, which is now sold in almost all supermarkets. However, you can do it yourself. So, in order to make puffs with cottage cheese, the recipe for the test will be as follows. A pack of butter, half a glass of milk, a bag of dried yeast and two eggs are taken for 250 grams of flour. In slightly warmed milk, yeast with sugar is poured and stirred. After that, flour is added here until the kneaded dough stops sticking.

A rectangular layer is rolled out in a thin layer onto which part of the softened oil is decomposed. The extreme corners of the dough are interconnected to form a rectangle that rolls out again. This procedure must be repeated several times, after which several rectangles are cut from the test. The filling is placed on them, and the edges are tightly pinched. I must say that puffs with cottage cheese can have any shape, square, rectangular, triangular.

There are several options for the filling, the simplest of which will be cottage cheese crushed with sugar. You can add crushed candied fruits, fresh or frozen berries here. In these cases, it is better to pinch the edges so that the juice released from them does not leak out during baking. So, you can cook puffs with cherries and cottage cheese. For such a filling, the berries are peeled, cut into small pieces (can be left in halves), filled with sugar, after which the curd mass is introduced here .

However, the filling for the puff with cottage cheese can be not only sweet. The original dish may be pastries with cottage cheese and ham. For such a filling, the curd rubbed through a sieve should be mixed with chopped greens. Cut ham into small pieces separately (you can take boiled sausage). It is peeled, cut in half rings and fried to a golden medium-sized onion. Ham and onions are added to the curd to taste, you can add chopped boiled egg.

Puffs are prepared with cottage cheese in the oven at low temperature. To make the baking surface golden and shiny, it is recommended to lubricate it with cooked sugar syrup or egg yolk. Before putting the products on a baking sheet, it is worth wetting it with cold water. Lubricating dishes with grease or oil if puff pastry is being prepared is not recommended.

There is a recipe in which the cottage cheese is kneaded directly into the dough, while the taste of the dish does not get any worse. So, you need half a kilogram of cottage cheese, two glasses of flour, a pack of butter and half a glass of sugar. Oil, previously softened, gradually intervenes in the curd, and flour is poured into which half a teaspoon of baking powder is added. Knead the dough and put in a cold place for an hour. Then it gets out, rolled out in a thin layer, and small circles are cut out. They are taken one at a time and dipped in sugar, after which they are folded in half with this side inward. Then they are again dipped in sugar on one side and laid out clean on a baking sheet. Puffs are baked for half an hour at a temperature of 180 degrees. Hot items can be sprinkled with powdered sugar or grated chocolate.

It should be noted that puffs are made quite simply and quickly, especially when ready-made dough is taken, which greatly simplifies the task of the hostess. Therefore, you can often delight loved ones with delicious and fragrant pastries with minimal time.
