It is enough to eat two eggs, a slice of bread and butter and a glass of tea to get a calorie intake for breakfast. Without them it is impossible to do in the preparation of a number of dishes. Egg salads are also tasty, tender and satisfying, which can be prepared at any time of the year, changing the combination of products.
In a salad with tuna and egg, you need to cut boiled steep eggs into slices, tuna into small pieces, and tomatoes into slices. Lay prepared foods in layers in a deep plate and pour over the sauce. It is advisable to prepare the salad in advance, at least one hour before serving. Instead of tuna, you can put sardines in a salad. The sauce is made from lemon juice, combined with tuna oil, seasoned with salt, sugar and diluted water. Necessary components: boiled eggs - 2 pieces, 200 g fresh tomato, 75 g tuna, 1 tablespoon tuna oil, juice of half a lemon, half a teaspoon of salt and sugar, half a spoon of water.
Salad with egg and cucumber. For 3 eggs - 500 g of fresh cucumbers, 110 g of sour cream, pepper, tomato, salt, dill. Thinly cut the cucumbers into rings, coarsely chop the eggs. Add dill, salt, sugar, pour sour cream. Cool the salad and garnish with tomato slices.
In winter, egg salads go well with boiled and canned vegetables. For example, a salad of eggs, potatoes and pickles. For 4 boiled eggs, take 1 kg of potato, 2 salted cucumbers, 1 onion, a glass of kefir or sour cream sauce, pepper, herbs, salt. Cook the potatoes in their skins, peel and cut into cubes, also cut the pickles. Chop the onion, cut the eggs into slices. Season with salt, pepper and sauce.

Soak the herring, peel, remove the seeds and cut the fillet into strips or cubes. Chop the eggs. Chop onion, pour over boiling water with vinegar, cool. Grind the mustard with vegetable oil. Combine all products with mashed mustard, sugar and pepper, mix and sprinkle with a coarsely chopped egg in a salad bowl.
If you stock up with dried mushrooms, you can cook salads from eggs with the addition of mushrooms. You should take 100 g of dried mushrooms, 4 boiled eggs, 3 onions, salt, mayonnaise, sugar, pepper, vinegar and parsley leaves. Pre-soak the well-washed mushrooms in milk for 8-10 hours, then boil and cut into strips. Cut the onion in half rings and boil for 5-7 minutes in water, in which sugar, vinegar and salt are added. Finely chop eggs. Mix everything with mayonnaise, season with pepper and salt. Transfer the mass to a salad bowl, garnish with tiny tiny mushrooms and parsley leaves on top.
With mushrooms and eggs, you can also build such a salad. Wash 200 g of raw champignons, crumble them with straws and stew with any fat. Dice 500 g of potatoes, sprinkle with vegetable oil. Boil cauliflower, disassemble for inflorescences. Boiled eggs (3 pcs.) Finely chopped. Combine all ingredients, pepper, salt, pour mayonnaise on top, mix gently. In a salad bowl, garnish with figuratively chopped gherkins and parsley leaves.
And in the spring, salads from eggs and early vegetables will come in handy. Egg salad with sour cream is prepared from 6 cool boiled eggs, green onions, 2 tablespoons butter, salt, lettuce, pepper and 110 g sour cream. Squeeze the eggs with a fork, salt, add melted butter, finely chopped green onions, pepper and knead. Put lettuce leaves on a flat dish and lay the egg mass on them, pour sour cream on it and garnish with a curly-cut radish.
