Homemade waffles are a favorite treat for many. But it can also happen that for some reason the classic recipe is not suitable for everyone. For example, vegans or people with egg allergies will not be able to try such a treat. However, you can make waffles without an egg and even without milk. Below are several options for making such a dessert.
Option with milk but no eggs
This recipe for egg-free waffles is in no way inferior to the classic options. If you want your dessert to be more aromatic, try adding more vanilla or a spoonful of ground cinnamon to the dough. In total, you will need:
- two glasses of all-purpose flour;
- 4 l including baking powder;
- 2 l including sugar sand;
- 2 cups of ordinary milk (a can of condensed water diluted with water can be used);
- 2 tablespoons vegetable oil;
- 2 tablespoons of table water;
- 1 liter including vanilla (extract);
- 4 tablespoons melted butter.
How to bake such a treat?
Mix flour, baking powder and sugar. In a separate bowl, combine milk, water, vanilla, and butter and butter. Add liquid ingredients to dry and mix gently. The dough for egg-free waffles should be a bit lumpy. Leave it to stand for several minutes. Once the waffle iron warms up, start baking the dessert.
Gluten Free Option
This egg-free waffle recipe for an electric waffle iron does not require the addition of milk or products with a gluten content. At the same time, the delicacy turns out to be very light and crispy. Waffles go well with bananas and crunchy peanut butter. To make such a dessert, you need:
- 1.25 cups of unsweetened vanilla almond milk (or plain soybean);
- 1 tablespoon apple cider vinegar (or lemon juice);
- 1 tablespoon of ground flaxseed + 2 tablespoons of table water;
- 1 cup buckwheat flour;
- 1 tablespoon coconut sugar;
- 1 teaspoon baking powder;
- 1 teaspoon of baking soda;
- 1 teaspoon cinnamon;
- a quarter of a teaspoon of fine sea salt;
- 2 tablespoons of melted coconut oil (optional).
Cooking from buckwheat flour
These Viennese waffles without eggs and gluten are made like this. In a measuring bowl, mix vegetable milk and apple vinegar. Then set the ingredients aside. In a small container, mix ground flax with 3 tablespoons of table water. Let stand for a few minutes.
Pour the almond milk mixture into a bowl of flax and mix to combine everything into a single mass. Add buckwheat flour, coconut sugar, cinnamon, baking powder, baking soda and salt (in that order). If you want to put oil, add it now. Use a spatula to combine the ingredients. Let the dough stand for 5-10 minutes while you heat the waffle iron.
Lightly grease the waffle iron, then pour enough dough to cover 3/4 of the bottom. Close and bake on each side for about 5-7 minutes. The edges of such egg-free waffles should become golden brown and crunchy. Cooking time and serving size will vary depending on the model of your waffle iron. Serve dessert warm with fruit jam or melted peanut butter and maple syrup.
The rest of the dough can be kept in the refrigerator for 3 days or frozen for up to 1 month.
Crispy rice
This is an unusual recipe - egg-free waffles in a waffle iron. Made from dough using thick coconut milk, these products have a pleasant golden color. They turn out to be crispy on the outside, soft and slightly elastic inside and very sweet at the same time. You can bake such waffles for breakfast or as a snack at any time.
In this recipe, a combination of tapioca starch and rice and all-purpose wheat flour is important. You can always do component replacement, but this will affect the texture.
For the low-calorie option, use skimmed cow milk instead of coconut. Avoid over-mixing the dough, as this will make the wafers stiff. So you will need:
- 2 tablespoons melted butter;
- one and a half glasses of rice flour;
- half a cup of tapioca starch;
- half a glass of universal flour;
- 1 teaspoon of baking powder;
- 6 tablespoons of flax seed mixture with water;
- quarter tsp salts;
- half a glass of sugar;
- one and a half glasses of coconut milk;
- 3/4 tablespoon cinnamon.
How to make?
Melt the butter in the microwave at low power, setting it to heat for about 30-45 seconds. Stir and let cool.
In a large bowl, sift the rice flour, tapioca starch, all-purpose flour, baking powder and salt.
In a separate container, combine a mixture of flax seeds with water and sugar. Beat until ingredients are combined. Add coconut milk, melted butter and cinnamon. Mix very carefully. Add half of the dry ingredients to the liquid mixture and mix until smooth. Then pour in the remaining dry mixture and continue whisking. Mix very carefully, breaking up large pieces. The dough does not have to be completely smooth, small lumps may remain in it. Let it stand for 15 minutes.
Set the waffle iron to “Maximum” or the highest setting and heat. Pour about 2/3 cup of dough into it. Using a spatula or spoon, spread the dough out evenly over the peaks of the waffle iron. Close the lid and fry for 4 minutes. Time may vary depending on your waffle iron model.
Once the wafers turn golden brown, use tongs to transfer them to a cooling rack or plate. Enjoy a hot or warm treat! Place the remaining waffles in the refrigerator for up to 1 week. You can freeze them for a long time - up to 3 months.
Whole Grain Wheat Option
These are healthy waffles without eggs and milk. They include whole wheat flour, coconut oil, chia seeds and any nut milk (ideally almond). In addition, the recipe for this delicacy does not imply any complex actions such as beating eggs and mixing them with other ingredients for a long time. In total you will need:
- 350 grams of whole grain flour;
- 1 tablespoon baking powder;
- 1 tablespoon raw sugar;
- a pinch of salt;
- one and a half glasses of almond milk (or soy, oat, etc.);
- 2 tablespoons chia seeds;
- 3 tablespoons melted coconut oil.
How to cook
Preheat the waffle iron. Combine 2 tablespoons of chia seeds with 6 tablespoons of water. Let it brew for 10-15 minutes until a gel forms.
Combine the dry ingredients in a bowl. Add the remaining liquid components. Stir until smooth. Pour the dough into a waffle iron and bake in accordance with the instructions. Serve with maple syrup, fresh fruit, or whipped coconut cream.
What do you need to keep in mind?
Note that melted coconut oil will quickly harden if it comes in contact with something cold, such as chilled milk. Therefore, do not use the ingredients directly from the refrigerator.
If you're not used to 100% whole grain foods, try using half of this flour and half universal. Alternatively, these wafers can also only be made with refined flour.
If you do not have chia seeds, you can replace them with flax seeds. You should make a gel pastry gel using the same ratio with water. Alternatively, use two banana purees.
Coconut oil can easily be replaced with olive, molten margarine or canola oil.

Another version of pumpkin waffles
You can make these waffles in a waffle iron without eggs, not only as a dessert, but also as a component of the main course. The peculiarity of this recipe is that the dough is not sweet. That is, you can serve these waffles with spicy pickled vegetables, fried bacon and other similar fillings.
To prepare them you will need:
- 1 cup white rice flour;
- 1/3 cup oatmeal;
- 1/4 cup starch of arrowroot or tapioca;
- 1 tablespoon baking powder;
- a quarter cup of pumpkin puree;
- 2 tablespoons maple syrup;
- 1 tablespoon olive oil;
- 1 cup unsweetened almond milk.
Bake a savory treat
In a large bowl, combine white rice and oatmeal, arrowroot starch or tapioca starch and baking powder. Pour almond milk into the mixture slowly and beat until a completely homogeneous mass is obtained. Add pumpkin puree, maple syrup and olive oil. Mix until fully combined. Leave the dough to stand for 10 minutes.
Preheat the waffle iron, grease its working surface with canola oil. Pour in the dough and fry until golden brown. It takes about four minutes to make one pumpkin waffle without an egg. Do not stack products on top of each other, otherwise they will cease to be crispy.
